With just 2 ingredients & incredibly yummy…

Two-ingredient no-bake coconut balls are a simple and delicious treat that require minimal effort and time to make. The 2 ingredients are desiccated coconut & condensed milk.

I tried a few variations as well by stuffing the coconut balls with dates, nuts & by drizzling with melted chocolate.

These coconut balls tastes very similar to Raffaelo coconut balls, of course without the roasted hazelnut.

I loved the dates stuffed coconut balls, enjoyed the bite of sweet dates along with the coconut.

Ingredients
  • Unsweetened desiccated coconut- 1 cup
  • Sweetened condensed milk- ½ cup
For coating
  • Unsweetened desiccated coconut- ½ cup
Options ingredients
  • Dates
  • Nuts like almonds, cashew nuts or pistachios
  • Melted chocolate
Instructions
  1. For making this use unsweetened desiccated coconut.
  2. Don't use sweetened coconut or freshly grated coconut.
  3. With this recipe, you'll be able to make 6 coconut balls. Double or triple the recipe for making more.
  4. To a bowl, add desiccated coconut & sweetened condensed milk, combine well using a spatula.
  5. Take 1 tablespoon of the coconut mixture, make into round balls.
  6. On a plate spread ¼ to ½ cup unsweetened desiccated coconut.
  7. Coat the coconut balls with the desiccated coconut.
  8. Place the coconut balls on a plate lined with parchment paper.
  9. Let chill in the refrigerator for an hour.
  10. I tried a few variations by stuffing the coconut balls with date slices & pistachios.
  11. I loved the bite of sweet dates in the coconut balls.
  12. You can also stuff chocolate into the coconut balls.
  13. I also melted some chocolate chips in the microwave & drizzled over the coconut balls.
  14. Absolutely yummy & so easy to make.
