Thai style chicken and veggie stir fry, aromatic and delicious…
One of my favorite cuisines is Thai cuisine. Thai dishes are aromatic, refreshing and delicious. In this dish, chicken coated with flour is first shallow fried, then combined with veggies and a nice sweet sauce is poured over it and stir fried. Brown sugar imparts the sweetness and dry red chili flakes gives a nice hotness to this dish.

Ingredients
For marinating chicken
- Chicken Breast or thighs, diced- 2
- All purpose flour- ¼ cup
- Salt- ¼ tsp
- Ground pepper- ⅛ tsp
For making sauce
- Soy sauce- 4 tbsp
- Rice vinegar- ¼ cup
- Brown sugar- ¼ cup
- Water- ¼ cup
For stir frying
- Oil- 2 tbsp (used for shallow frying chicken)
- Garlic, chopped- 1 tbsp
- Ginger, chopped- 1 tbsp
- Dry red chili flakes- ½ to 1 tsp
- Onion, sliced- 1
- Celery, diced- 2 stalks
- Broccoli florets- of ½ broccoli
- Spring onions, chopped- 2 stalks
- Cilantro, chopped- 2 handfuls
- Fresh Basil leaves, chopped- 5 leaves
Other ingredients
- Oil- ¼ to ½ cup, for shallow frying chicken
Instructions
- In a bowl, combine chicken along with flour, salt and ground pepper.
- Place a saucepan over medium heat, add oil for shallow frying chicken.
- Add chicken and shallow fry till golden brown.
- Transfer to a plate lined with paper towel.
- In a bowl, combine all the above mentioned ingredients for making sauce. Keep aside.
- Use the same pan used for shallow frying chicken.
- Add 2 tbsp of oil used for frying chicken.
- Add ginger and garlic chopped, saute till golden.
- Add dry red chili flakes, saute for a few seconds.
- Add onion, saute for a few minutes.
- Add celery and broccoli, stir fry till veggies turn slightly soft.
- Add shallow fried chicken, combine well.
- Add the prepared sauce, combine well and let cook for a few minutes.
- Add spring onions, chopped cilantro and basil leaves, combine well.
- Cook for a couple of minutes.
- Remove the pan from the heat. Serve with noodles or rice.
