Low Carb Healthy Recipe | Pan Fried Chicken In Tomato Mushroom Sauce With Parmesan Zucchini Noodles

Pan-fried aromatic chicken in an amazing tomato mushroom sauce along with parmesan zucchini noodles or zoodles, this has turned into one of my favorites. It’s a complete meal for lunch or dinner.

Ingredients
For making pan fried chicken
  • Boneless chicken breasts- 2
  • Paprika- 1 tsp
  • Ground black pepper- ¼ tsp
  • Dried herb seasoning- 1 tsp
  • Salt- ¾ tsp
For making tomato mushroom sauce
  • Olive oil- 1 tbsp
  • Garlic, chopped- 2 tbsp
  • Shallots, sliced- 4 (or add 1 onion)
  • Mushroom, sliced- 1½ cups
  • Tomato paste- 3 tbsp (or add ½ cup tomato sauce)
  • Dried oregano- 1 tsp
  • Paprika- 1 tsp
  • Water- ¼ cup
  • Salt- 1 tsp
For making parmesan zucchini noodles
  • Fresh zucchini- 3
  • Olive oil- ½ tbsp
  • Dried chili flakes- ½ tsp
  • Ground black pepper- ⅛ tsp
  • Paprika- ½ tsp
  • Salt- ½ tsp
  • Parmesan cheese- ¼ to ½ cup ( +2 tbsp to garnish)
Instructions
  1. I've taken 2 boneless chicken breasts, for making more take more chicken.
  2. Add all the seasonings mentioned 'for marinating the chicken', spread well.
  3. Let marinate for 15 minutes.
  4. Place a cast iron skillet over medium heat, add ½ tbsp olive oil.
  5. Place the marinated chicken on the pan, cook over low-medium heat.
  6. Flip over & cook till both sides have turned golden brown & the inside has cooked through.
  7. Transfer the chicken to a plate & keep them covered.
  8. I've used the same pan for making the sauce.
  9. Using a wooden spatula, scrape off the particles stuck to the pan.
  10. Add olive oil.
  11. Add garlic, saute till golden in color.
  12. Add shallots, season with ½ tsp salt, stir fry till shallots turn golden in color.
  13. Add mushrooms, cook for 2 minutes.
  14. Add tomato paste, dried oregano & paprika, combine well; cook for a minute.
  15. Add water, combine well.
  16. Add ½ tsp more salt.
  17. Place the pan fried chicken on the sauce, cover the chicken with the sauce.
  18. Cook for 2 minutes.
  19. Remove the pan from the heat, keep it covered.
Making Parmesan Zucchini Noodles
  1. Peel the skin off the zucchinis.
  2. I've used a spiralizer to make spirals or noodle shapes out of the zucchini.
  3. Or use a peeler & peel the zucchini lengthwise.
  4. Place a wide pan over medium heat.
  5. Add oil, add dried chili flakes, saute for a few seconds.
  6. Add the zucchini noodles, gently combine well.
  7. Cook for 3 minutes till zucchini turns soft.
  8. Don't over cook the zucchini, will turn mushy.
  9. Add ground pepper, paprika & salt, combine well.
  10. Finally, add parmesan cheese, combine well.
  11. Remove the pan from the heat.
  12. On a plate, serve the zucchini noodles, spread some tomato mushroom sauce & top with pan-fried chicken.
  13. Garnish with parmesan cheese.
  14. Enjoy this delicious, healthy & low carb dish for lunch or dinner; tastes absolutely yum.
