Instant Pot Italian Wedding Soup – 3 Minute Dump & Go Recipe

Ingredients
For making meatballs
  • Ground beef- ½ lb
  • Onion, chopped small- ½ of a medium-sized onion
  • Italian seasoning- ½ tbsp
  • Breadcrumbs- ½ cup
  • Parmesan cheese- ½ cup
  • Ground black pepper- ½ tsp
  • Parsley, chopped- 2 tbsp
  • Salt- 1 tsp
For making Soup
  • Water or chicken stock- 6 cups
  • Prepared meat balls
  • Spinach chopped small- 1 cup
  • Italian seasoning- ½ tbsp
  • Orzo or pearl pasta- 1 cup
  • Ground black pepper- ¼ tsp
  • Parmesan cheese, grated- to top the soup
Instructions
  1. In a large bowl, combine all the ingredients to make the meat balls.
  2. You could use either ground beef or chicken or a combination of both.
  3. Make very small balls out of the meatball mixture, around 20 to 25 balls. Keep them aside.
  4. To the stainless steel pot, add water, spinach leaves, orzo pasta, Italian seasoning & ground black pepper.
  5. Gently drop the meatballs.
  6. Close the pot with the lid.
  7. Select pressure cook setting, set the time to 3 minutes at high pressure.
  8. After pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
  9. Open the lid.
  10. Serve into a soup bowl, if needed sprinkle with grated parmesan cheese and enjoy every sip of it.
