Instant Pot French Ratatouille – 2 Minute Dump & Go Recipe

Ingredients
  • Onion, chopped- 1
  • Zucchini, diced- 2
  • Egg plant, diced- 1
  • Green pepper, diced- 1
  • Red pepper, diced- 1
  • Tomatoes, chopped- 2
  • Garlic, chopped- 3 cloves
  • Ground black pepper- ½ tsp
  • Salt- 1 tsp
  • Parsley- 2 tbsp
  • Thyme- 1 tbsp
  • Basil- 2 tbsp
  • Dried bay leaves- 2
Instructions
  1. To the stainless steel pot, add all the veggies & herbs, combine well.
  2. Close the pot with the lid.
  3. Select pressure cook setting, set the time to 2 minutes at high pressure.
  4. After pressure cooking, do a quick pressure release.
  5. Open the lid.
  6. Serve in a bowl & enjoy with toasted bread.
