Chicken Jambalaya Recipe

Absolutely flavorful Jambalaya…

I am so glad that I made a large batch of this chicken Jambalaya, I’ve been enjoying this for the past couple of days. As it sits, the taste and the flavor of this rice is getting better.

Jambalaya is a popular dish in Louisiana, and it resembles a lot to Paella which is popular in Spanish cuisine. A very flavorful and aromatic dish that can be made by adding shrimp, chicken and vegetables to the rice that is cooked in tomato sauce and chicken stock. This is a complete meal and nothing needs to be accompanied with this. I still couldn’t get over with the taste of this dish, absolutely delicious!

Ingredients
For marinating chicken
  • Chicken breasts, halved- 2 breasts
  • Ground cumin- 1 /2 tsp
  • Paprika- 1 tsp
  • Basil leaves, chopped- 5 leaves
  • Rosemary leaves- 1 sprig
  • Salt- to taste
While cooking Rice
  • Butter- 2 tbsp
  • Onion, chopped- 1
  • Green pepper, chopped-1
  • Celery, chopped- 1 stick
  • Carrot, chopped- 1
  • Garlic, chopped- 2 cloves
  • Tomato paste- 2 tbsp
  • Paprika- 1 /2 tsp
  • Cayenne or chili powder - 1 /2 tsp
  • Ground cumin-1/2 tsp
  • Tomato sauce, low-sodium- 1 cup
  • Chicken stock- 2 cups
  • Water- 1 1 /4 cup
  • Long grain rice- 2 cups
  • Cilantro or Parsley chopped- 1 /4 cup
Instructions
  1. Cut the chicken breasts into halves and marinate with the above mentioned ingredients "for marinating chicken".
  2. Pan fry the marinated chicken in little oil till it's slightly cooked. Do not over cook the chicken. Let cool down and chop the cooked chicken. Keep aside.
  3. Heat a large saucepan over medium heat, add butter and let it melt.
  4. Add chopped onion, green pepper, celery and carrots; sprinkle a few pinches of salt. Saute the vegetables till it's tender.
  5. Add garlic and saute for a couple of minutes.
  6. Add tomato paste and combine well with the vegetables.
  7. Add paprika, cayenne and ground cumin, combine well.
  8. Add the cooked and chopped chicken, combine well.
  9. Add tomato sauce, chicken stock and water, let the liquid come to a boil.
  10. Add the rice and combine to the liquid.
  11. Sprinkle cilantro or parsley over the rice.
  12. Taste and add salt if needed.
  13. Cover the pan with its lid and cook till the rice has cooked well and the liquid has dried off.
  14. After the rice has cooked, remove the pan from the heat and keep covered for sometime.
  15. Serve warm along with french fries or roasted veggies.
Notes
You could also add shrimp to this dish.
