Carrot Mezhukkupuratti or Stir fry – Easy Recipe

Carrot Mezhukkupuratti is a traditional Kerala-style stir fry that is simple yet flavorful. The name “mezhukkupuratti” literally means “stir-fried in oil” in Malayalam. This dish is known for its minimal use of spices and ingredients, allowing the natural sweetness of the carrots to shine.

This is served as a side dish along with rice.

Ingredients
  • Coconut oil- 1½ tbsp
  • Mustard seeds- 1 tsp
  • Dried red chilies- 2, halved
  • Curry leaves- 1 sprig
  • Small or pearl onions, chopped- 8 (or use 2 large shallots)
  • Green chilies, chopped- 1 or 2
  • Carrot, chopped- 3 carrots
  • Chili powder- 1 tsp
  • Turmeric powder- ¼ tsp
  • Salt- 1½ tsp
Instructions
  1. Place a sauce pan over medium heat, add oil, let turn hot.
  2. Add mustard seeds, let splutter.
  3. Add dried red chilies and curry leaves, saute for a couple of seconds.
  4. Add chopped small or pearl onions or add 2 large shallots, season with salt.
  5. Add green chilies & saute till onions turn light golden in color.
  6. Add chopped carrots along with ¼ cup water, cook covered till carrots turn soft.
  7. Open the lid, stir fry the carrots till all the liquid has dried off.
  8. Add chili powder, turmeric powder and salt, stir fry for 2 minutes.
  9. Take the pan off the heat, transfer to a bowl and serve as a side dish along with rice.
