Carrot Mezhukkupuratti is a traditional Kerala-style stir fry that is simple yet flavorful. The name “mezhukkupuratti” literally means “stir-fried in oil” in Malayalam. This dish is known for its minimal use of spices and ingredients, allowing the natural sweetness of the carrots to shine.
This is served as a side dish along with rice.

Ingredients
- Coconut oil- 1½ tbsp
- Mustard seeds- 1 tsp
- Dried red chilies- 2, halved
- Curry leaves- 1 sprig
- Small or pearl onions, chopped- 8 (or use 2 large shallots)
- Green chilies, chopped- 1 or 2
- Carrot, chopped- 3 carrots
- Chili powder- 1 tsp
- Turmeric powder- ¼ tsp
- Salt- 1½ tsp
Instructions
- Place a sauce pan over medium heat, add oil, let turn hot.
- Add mustard seeds, let splutter.
- Add dried red chilies and curry leaves, saute for a couple of seconds.
- Add chopped small or pearl onions or add 2 large shallots, season with salt.
- Add green chilies & saute till onions turn light golden in color.
- Add chopped carrots along with ¼ cup water, cook covered till carrots turn soft.
- Open the lid, stir fry the carrots till all the liquid has dried off.
- Add chili powder, turmeric powder and salt, stir fry for 2 minutes.
- Take the pan off the heat, transfer to a bowl and serve as a side dish along with rice.
