Ragi- Finger Millet Puttu | Healthy Gluten Free Kerala Recipe

Ragi puttu is a popular South Indian dish made from finger millet flour, known as ragi flour. It is a nutritious and gluten-free dish that is commonly consumed for breakfast. Ragi, or finger millet, is a whole grain that is rich in protein & nutrients such as calcium, iron, and fiber, making it a healthy choice.

To prepare ragi puttu, the ragi flour is mixed with water and salt to form a crumbly texture. This mixture is then layered with grated coconut and steamed in a special puttu maker for a few minutes.

Healthy & steaming hot ragi puttu will be ready in a matter of minutes. This puttu can be enjoyed with chickpea curry or with chicken/mutton/beef or vegetarian curries.

Ingredients
  • Ragi- finger millet flour- 1½ cups
  • Water- close to ½ cup
  • Salt- ½ tsp
  • Grated coconut- ½ cup
Instructions
  1. Ragi or finger millet flour for making puttu is available in Indian stores.
  2. To a bowl, add ragi flour & salt, combine well.
  3. Gradually add water, I've added close to ½ cup water & combine well.
  4. Our goal is to wet the flour, when we hold the wet flour inside the palm of our hand it should form a ball & when released it should be like crumbs, that's how the consistency of puttu flour should be.
  5. Don't add too much water & make into a dough consistency.
  6. I've used a puttu maker that can be kept on the pressure cooker whistle hole.
  7. Keep the disc that came with the puttu maker into the puttu maker.
  8. Spread 1 tbsp grated coconut on the disc.
  9. Using your hand add the wet ragi flour, and fill till the top of the puttu maker.
  10. Spread 1 tbsp grated coconut over the flour.
  11. Close with the lid.
  12. To a pressure cooker, add 2 cups water.
  13. Keep the ring on the lid.
  14. Close the pressure cooker with the lid.
  15. Don't keep the whistle on the whistle hole.
  16. Place the cooker over medium heat.
  17. Let steam release from the whistle hole.
  18. Place the puttu maker on the whistle hole, let steam cook for 4 to 5 minutes, till the steam releases from all the holes on the puttu maker lid.
  19. Take the puttu maker from the pressure cooker.
  20. Open the lid, gently flip the puttu maker on a plate.
  21. Steaming hot ragi puttu is ready to be enjoyed.
  22. Enjoy with your favorite curry.
