This has turned into one of my favorite dishes with mushrooms. Earthy mushrooms along with the spices, it’s an absolute delight. A perfect vegetarian side dish to enjoy with rice or chapati.

Ingredients
- Oil- 1 tbsp
- Mustard seeds- 1 tsp
- Cumin seeds- 1 tsp
- Dried red chilies, halved- 2
- Curry leaves- 10 leaves
- Onion, chopped- 1
- Salt- 1 tsp
- Mushrooms, brown cremini or white button, sliced- 2 cups
- Kashmiri chili powder- 1 tsp (for more spice add hot chili powder)
- Turmeric powder- ⅛ tsp
- Coriander powder- 2 tsp
- Cumin powder- ½ tsp
- Garam masala- ½ tsp
- Lemon or lime juice- 1 tsp
- Sesame seeds- 1 tbsp
- Cilantro, chopped- 2 tbsp
Instructions
- Place a saucepan over medium heat, add oil & let turn hot.
- Add mustard seeds, let splutter.
- Add cumin seeds, let turn light brown in color.
- Add dried red chilies & curry leaves, saute for a few seconds.
- Add onions, season with ½ tsp salt, let onions turn golden in color.
- Add mushrooms, combine well.
- Add ¼ cup water & cook covered for a few minutes till mushrooms turn soft.
- Do not overcook the mushrooms.
- Add all the spices: Kashmiri chili, turmeric, coriander, cumin, garam masala & ½ tsp salt. Combine well.
- If you prefer this dish to be spicy, add regular hot chili powder instead of Kashmiri chili powder.
- Add 2 tbsp water & stir fry over high heat for 2 minutes.
- Add freshly squeezed lime or lemon juice, combine well.
- Add sesame seeds & chopped cilantro, combine well.
- Serve in a bowl & enjoy with rice or chapati.
