The simplest peanut butter cookies you’ll ever whip up…
My husband and I are absolutely smitten with these cookies. This recipe ticks all the boxes for me: it’s a breeze to make, requires minimal ingredients, and in mere minutes, I can savor these delectable treats. They’re delightfully crispy and practically melt in my mouth. And, to top it off, this recipe meets my husband’s dietary preferences as well: it’s gluten-free, dairy-free, protein-packed, wonderfully creamy, and oh-so scrumptious.
A few weeks back, my husband had the pleasure of trying these cookies at work, courtesy of one of his co-workers. The thoughtful lady decided to whip up a batch, ensuring they were gluten-free so that my husband could enjoy them too. After indulging in a few of these cookies (he managed to resist the urge to devour them all), my husband couldn’t resist getting the recipe. He was expecting a lengthy, one-page affair but was pleasantly surprised to receive the shortest recipe he’d ever laid eyes on, calling for just three ingredients.
Without delay, he forwarded the recipe to me with a little note that read, “I can’t wait to get home and make these cookies all on my own.”
Indeed, these cookies are so straightforward that even a child could whip them up, not to mention my husband. You simply mix peanut butter, sugar, egg, and chocolate chips (plus, you can add vanilla extract if you like). Roll the dough into small balls, arrange them on a baking sheet, and pop them in the oven. After a brief 20-minute bake, you’ll have perfect peanut butter cookies to tantalize your taste buds. Give them a few moments to cool so that they will turn crunchy, and then dive right in.
I’ve previously shared a similar recipe for peanut butter cookies that included chocolate chips and flax seeds. This version, however, is all about pure peanut butter goodness, without any additional ingredients.
Step By Step Pictures
- Peanut butter, smooth- 1 cup
- Sugar- ¾ cup (Brown sugar or white sugar)
- Egg- 1
- Chocolate Chips- 2 tbsp (semi-sweet)
- Preheat the oven to 350 F or 175 C.
- Combine all the above-mentioned ingredients using an electric hand mixer till well incorporated, about 2 to 3 minutes.
- I've also tried with ½ cup sugar & the cookies tasted great, so if you like low sugar, just add ½ cup.
- If you are adding chocolate chips, add that and combine well using a spatula. Adding chocolate chip is optional. If added cookies taste much more delicious.
- Scoop 1 tbsp of the cookie dough, roll it between the palm of your hands and slightly flatten it.
- Place on a baking sheet lined with parchment paper.
- Place the flattened dough 2 inches apart from each other, as the dough will expand while baking.
- Bake for 20 minutes or till the edges of the cookies turn light brown. Don't over bake them.
- Take the baking sheet from the oven, allow the cookies to cool down on the baking sheet for 10 minutes.
- When you take the cookies out of the oven will be very soft & crumbly, so ensure to let them cool down.
- After the cookies cool down, they will turn firm and crunchy.
