Cabbage & scrambled eggs, I find this an awesome combination…
When it comes to cabbage, I only like Kerala style thoran or stir fry with coconut. Once I added scrambled eggs while cooking cabbage & felt it was the best addition to the cabbage. I stir fried the cabbage with scrambled eggs & coconut, a very simple yet delicious vegetarian dish.

Ingredients
- Coconut oil- 1 tbsp
- Mustard seeds- 1 tsp
- Dried red chilies, halved- 2
- Curry leaves- 8 leaves
- Shallots, sliced- 2 large or 5 small onions
- Shredded cabbage- 4 cups
- Salt- 1½ tsp
- Grated coconut- ½ cup
- Eggs- 2
- Ground black pepper- ½ tsp
Instructions
- Place a saucepan over medium heat, add coconut oil, let turn hot.
- Add mustard seeds, let splutter.
- Add dried red chilies & curry leaves, saute for a few seconds.
- Add the sliced shallots, season with 1 tsp salt, saute for 2 minutes.
- Add the shredded cabbage, combine well.
- Ensure to shred the cabbage rather than chopping.
- Cook covered till the cabbage turns soft, if needed add ¼ cup & cook the cabbage.
- Add grated coconut & stir fry over high heat till light golden spots form on the cabbage.
- Slide the cabbage to one side of the pan, crack the eggs on the other side.
- Season with ground black pepper & ½ tsp salt.
- Scramble the eggs & combine with the cabbage.
- Stir fry for a few minutes.
- Take the pan off the heat & keep it covered.
- Enjoy as a side dish along with rice or with chapati.
