Nutritious & healthy broccoli stir fry…
One of the vegetarian dishes in Kerala cuisine is thoran or stir fry with coconut. A variety of veggies can be used for making it. The other day, I wanted to make a unique dish with broccoli & ended up making thoran, broccoli stir-fried with coconut, towards the end I added egg & scrambled it. This dish turned out to be delish, in fact my favorite dish with broccoli.
Broccoli Coconut Scrambled Eggs Thoran- Stir Fry

Ingredients
- Coconut oil- 2 tbsp
- Mustard seeds- 1 tsp
- Whole dried red chilies, halved- 2
- Curry leaves- 1 sprig
- Shallots, sliced- 2 large shallots or 4 small/pearl onions
- Broccoli florets- 1 medium broccoli
- Salt- 1½ tsp
- Kashmiri chili powder- 1 tsp
- Turmeric powder- ⅛ tsp
- Cumin powder- ½ tsp
- Grated coconut- ½ cup
- Egg, beaten- 1 or 2
Instructions
- Place a large saucepan over medium heat.
- Add coconut oil, let turn hot.
- Add mustards seeds let splutter.
- Add dried red chilies & curry leaves, saute for a few seconds.
- Add shallots, season with 1 tsp salt, saute till shallots turn golden in color.
- Add broccoli florets, combine well.
- Add ½ cup water, cook covered till the broccoli has turned soft.
- Add Kashmiri chili powder, turmeric powder, cumin powder & ½ tsp salt, combine well.
- Add grated coconut & stir fry till coconut turns golden in color.
- Crack 1 or 2 eggs to a bowl, beat well using a fork or whisk.
- Slide the broccoli to one side of the pan, add the egg & scramble it.
- Combine the egg with the broccoli & stir fry over high heat for a few minutes.
- Serve in a bowl, enjoy as a side dish with rice or chapati.
- Tastes delicious & is quite nutritious.
