Broccoli Coconut Scrambled Eggs Thoran- Stir Fry

Ingredients
  • Coconut oil- 2 tbsp
  • Mustard seeds- 1 tsp
  • Whole dried red chilies, halved- 2
  • Curry leaves- 1 sprig
  • Shallots, sliced- 2 large shallots or 4 small/pearl onions
  • Broccoli florets- 1 medium broccoli
  • Salt- 1½ tsp
  • Kashmiri chili powder- 1 tsp
  • Turmeric powder- ⅛ tsp
  • Cumin powder- ½ tsp
  • Grated coconut- ½ cup
  • Egg, beaten- 1 or 2
Instructions
  1. Place a large saucepan over medium heat.
  2. Add coconut oil, let turn hot.
  3. Add mustards seeds let splutter.
  4. Add dried red chilies & curry leaves, saute for a few seconds.
  5. Add shallots, season with 1 tsp salt, saute till shallots turn golden in color.
  6. Add broccoli florets, combine well.
  7. Add ½ cup water, cook covered till the broccoli has turned soft.
  8. Add Kashmiri chili powder, turmeric powder, cumin powder & ½ tsp salt, combine well.
  9. Add grated coconut & stir fry till coconut turns golden in color.
  10. Crack 1 or 2 eggs to a bowl, beat well using a fork or whisk.
  11. Slide the broccoli to one side of the pan, add the egg & scramble it.
  12. Combine the egg with the broccoli & stir fry over high heat for a few minutes.
  13. Serve in a bowl, enjoy as a side dish with rice or chapati.
  14. Tastes delicious & is quite nutritious.
