Tapioca is a staple food in Kerala, a variety of delicious dishes can be prepared with kappa or tapioca.

Paal kappa or tapioca cooked in coconut milk has been a trending recipe, this dish got popular for its simplicity and comforting flavours. This is a very easy recipe & can be made effortlessly.

Paal Kappa can be enjoyed as it is due to its rich flavors from coconut milk and the subtle sweetness of tapioca. I had this with beef roast, tasted absolutely delish.

Ingredients
  • Tapioca, diced- 2 large tapioca diced, 4 cups
  • Crushed small onions- 3 small onions or 1 large shallot
  • Crushed green chilies- 3 to 4
  • Ginger, grated- 1 tsp
  • Thin coconut milk- 2 cups
  • Thick coconut milk- ½ cup
  • Salt- 2 tsp
For tempering
  • Coconut milk- 3 tbsp
  • Mustard seeds- 1 tsp
  • Small onions, chopped- 2
  • Dried red chilies- 3
  • Curry leaves- 1 sprig
Instructions
  1. Either fresh or frozen tapioca can be used.
  2. To a large saucepan, add water & place over medium heat.
  3. Add the diced tapioca & 1 tsp salt, cook till the tapioca has turned soft.
  4. Strain the water, and add the cooked tapioca back to the pan.
  5. Using a wooden spoon, slightly mash the tapioca.
  6. Don't mash completely.
  7. Add the crushed small onions, green chilies & ginger, combine well.
  8. Add 2 cups thin coconut milk & 1 tsp salt, combine well.
  9. Cook for a few minutes.
  10. Add thick coconut milk, combine well.
  11. Cook for a minute & take the pan off the heat.
  12. Keep it covered.
  13. Place a small frying pan over medium heat.
  14. Add coconut oil, let turn hot.
  15. Add mustard seeds, let splutter.
  16. Add chopped small onions, fry till onions turn golden in color.
  17. Add dried red chilies & curry leaves, fry for a few seconds.
  18. Pour this over the paal kappa & keep it covered for a few minutes.
  19. Enjoy this delicious paal kappa as it is or with chicken, beef or mutton curries or roast.
