In the Instant Pot, white basmati rice only requires 6 minutes of pressure cooking. A delightful fusion of mixed vegetables, aromatic spices, and perfectly pressure-cooked Basmati rice results in an exquisite fluffiness that’s simply irresistible.

- Ghee- 1 tbsp
- Dried bay leaves- 2
- Cumin seeds- 1 tsp
- Onion, chopped- 1
- Mixed vegetables- 1½ cups (carrot, beans, peas & corn)
- Kashmiri chili powder- 1 tsp
- Turmeric powder- ⅛ tsp
- Coriander powder- ½ tbsp
- Fennel powder- 1 tsp
- Garam masala- 1 tsp
- Salt- 1½ tsp
- Water- 2¼ cups
- White basmati rice, rinsed- 2 cups
- Cilantro, chopped- 3 tbsp
- Use white basmati rice, I've taken 2 cups of rice & have rinsed the rice well.
- If you prefer you can soak the rice in water for 10 minutes & then rinse the rice taken in a strainer.
- Select saute setting on the Instant Pot, medium temperature.
- After the pot turns hot, add ghee.
- Add dried bay leaves & cumin seeds, saute for a few seconds. (Don't let the cumin seeds turn brown).
- Add onion & mixed veggies, saute for a minute.
- I've taken carrot & beans cut small, peas & corn kernels.
- Add all the spices & salt, any kind of spices or seasonings of your choice can be added.
- Combine well.
- Add 2¼ cup water.
- Add 2 cups of rinsed white basmati rice.
- In the Instant Pot, for cooking rice it's not 1 cup rice & 2 cups water ratio.
- For 2 cups rice, only 2¼ cups water is required. Don't add more water rice will turn mushy.
- Immerse the rice in the water.
- Garnish with chopped cilantro.
- Close the pot with the lid.
- Cancel saute setting.
- Select pressure cook setting, set the time to 6 minutes at high pressure.
- After 6 minutes of pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
- Open the lid, the aroma from this pulao is just amazing.
- Fluff the rice using a fork.
- Serve on a plate & enjoy with raita, pappad & pickle.
- This pulao can also be served with chicken, mutton, beef or vegetable curries or stews.
