My new obsession sun dried tomatoes…
Hello everyone, how is it going? I know it’s been more than a week since my last post. I was out of town, was in vancouver and had an awesome time roaming around with my like minded girl friends. Being a traveloholic, do you think I would come back without enjoying the essence of the beautiful Vancouver? No way! I roamed around crazily and visited most of the places I possibly could and also met one of my high school friends after almost 15 years. It was an amazing experience. I am beyond in love with Vancouver, it’s such a stunning city cuddled with mountain, ocean and nature. Being an avid nature lover, I thoroughly enjoyed the natural side of the city. While planning the trip, one place I looked forward to visit was the world famous Capilano suspension bridge, the picture of the bridge on their website literally stole my heart. It was one of the most breathtaking rain forest I’ve ever been to. I am out of words to describe that place, you gotta see with your own eyes to enjoy it fully. Even the pictures I took didn’t capture the beauty of that place completely. Here are some of the pictures that I clicked. Sit back, relax and enjoy!

Now the recipe for sun dried tomato chicken 🙂
I used sun dried tomato in olive oil and herbs, it was very flavorful compared to the plain sun dried tomatoes.
Sun Dried Tomato Chicken
Ingredients
- Chicken breasts- 3, cut into wedges
- Extra virgin olive oil- 2 tbsp
- Salt- to taste
- Ground pepper- 1/2 tsp
- Mushrooms, white halved- 1 pack
- Sun dried tomatoes in olive oil and herbs (drain the olive oil)- 1/2 cup, chopped
- Basil leaves- 12
 To puree:
- Sun dried tomatoes in olive oil and herbs- 1 cup (drain the olive oil)
- Water- 1/4 cup
Other ingredients
- Cooked penne or other variety pasta
Instruction
- Cut the chicken breasts into thin wedges.
- Heat a non-stick cooking pan, add extra virgin olive oil, add the chicken, season with salt and ground pepper, combine well.
- Cover the pan with its lid and cook the chicken.
- After the chicken has almost done, add mushrooms and cook covered till mushrooms turn tender.
- If using sun dried tomatoes in olive oil, drain the oil and add just the tomatoes.
- Add sun dried tomatoes, combine well and cook for a few more minutes.
- In a blender, puree the sun dried tomatoes along with water to a coarse paste.
- Add the puree to the cooked chicken, combine well and let cook for some time till it has well incorporated with the chicken.
- Add basil leaves and cook for a few more minutes.
- Taste and add more salt or ground pepper according to your needs.
- Remove the pan from the heat.
- Cook penne pasta or any variety of pasta.
- You could either combine the sun dried tomato chicken with the pasta or serve the chicken over the pasta
- Serve warm.
- If you want you could garnish with freshly grated parmesan cheese.
Tips:
- If you are using plain sun dried tomatoes, you could add a couple of teaspoons of herbs like dried oregano or Italian seasoning while cooking the chicken.
