Shrimp-Squid Roast Rice, One Pot Meal Kerala Recipe

Delicious & flavorful one pot meal…

One pot meals are my favorite & when it has shrimp & squid, it will be delightful. With shrimp & squid I often make a Kerala style roast, the other day I had some leftover Kerala matta rice, I combined the roast with the rice. Voila, a perfect one pot meal was ready in no time.

This dish is not only quick and easy to prepare, but it’s also a great option for busy days when you’re short on time.

Ingredients
To crush
  • Ginger- 2-inch slice
  • Garlic- 3 cloves
  • Green chilies- 2
  • Curry leaves- 1 sprig
For cooking
  • Coconut oil- 3 tbsp
  • Crushed ingredients
  • Onions, chopped- 2
  • Small-pearl onions, chopped- 6
  • Tomato, chopped- 1
  • Kashmiri chili powder- 1 tsp
  • Chili powder- 1 tsp
  • Turmeric powder- ⅛ tsp
  • Coriander powder- 2 tsp
  • Salt- 2 tsp
  • Shrimp- 8, large or 12 small-sized
  • Squid rings- 12 rings
  • Water- ¼ cup
  • Cooked matta rice- 3 cups
For Topping
  • Coconut oil- 2 tbsp
  • Coconut slices- 6 slices
  • Curry leaves- 1 sprig
Instructions
  1. I've used shrimp & squid rings. If you prefer you can make this with either shrimp or squid.
  2. I've added cooked Kerala matta rice, if you don't have matta rice you can also add Sona Masoori rice or basmati rice.
  3. Crush the ginger, garlic & green chilies, curry leaves in a mortar & pestle.
  4. Use a large cast iron skillet, add coconut oil.
  5. Add the crushed ginger-garlic-green chilies-curry leaves, saute for a minute.
  6. Add the chopped onions & small onions.
  7. Season with 1 tsp salt, cook till the onions turn golden in color.
  8. Add tomato, cook till tomato has mashed up.
  9. Add the spices & 1 tsp salt, combine well.
  10. Add the shrimp & squid rings, combine well.
  11. Add ¼ cup water, combine well & cook till the shrimp & squid have turned soft.
  12. Add 3 cups cooked Kerala matta rice, combine well.
  13. Cook for 2 minutes.
  14. Take the pan off the heat & keep it covered.
  15. Place a small frying pan over medium heat, add 2 tbsp coconut oil.
  16. Add coconut slices, fry till they turn golden in color.
  17. Add curry leaves, fry for a few seconds.
  18. Pour this over the prepared shrimp-squid rice. Adding this is optional.
  19. Enjoy with pappadom & pickle.
