Kerala lunch…
Typical non-vegetarian Kerala lunch includes Kerala matta rice with fish curry, fried fish, vegetable thoran or stir fry & a curry usually made of coconut or yogurt.
Here is my Kerala lunch
Kerala matta rice
Kerala spicy & tangy fish curry with whiting fish & Kudampuli or cambodge-Malabar tamarind
Whiting fish fry
Whiting is a very delicate fish with a slightly sweet taste. It inhabits the eastern Atlantic Ocean and the Mediterranean Sea, as well as the North Sea on the East Coast of Britain.
I made a homemade marinade with chili powder, turmeric powder, ground black pepper, salt & added 1 tbsp gram flour or besan, mixed with 3 tbsp water & made into a smooth marinade. Spread over the whole whiting fish & let marinate for 15 minutes. Fry the marinated fish in coconut oil, and add a few curry leaves while frying imparting a nice aroma.
Beetroot Coconut thoran or stir fry
This is Kerala-style simple thoran or stir fry with coconut, follow the recipe. Instead of swiss chard add grated beetroot.
