Healthy flattened rice, coconut & jaggery balls…
One of the easiest sweet snacks in Kerala is ariyunda, sweet balls made with ground rice. Instead of ground rice, I’ve used ground flattened rice, mixed with coconut & jaggery.
Easy to make & delicious snack that will satisfy your sweet craving.

Ingredients
- Flattened rice- 1 cup
- Semolina or sooji/rava- ¼ cup
- Whole cardamom- 1
- Grated coconut- ½ cup
- Jaggery, crushed- ½ cup
- Milk- ½ cup
- Almonds or cashew nuts, crushed- ¼ cup
Instructions
- Place a pan over medium-low heat, add flattened rice & semolina, roast for 5 minutes.
- Let cool down for a few minutes.
- Add to a blender jar along with whole cardamom, grind to a fine powder. Keep it aside.
- In the same blender jar, add coconut & jaggery, grind well.
- Place a pan over medium heat, add the ground flattened rice & semolina along with the ground coconut & jaggery.
- Combine everything for a couple of minutes.
- Add milk, stir fry for a couple of minutes, let the semolina turn soft.
- Add the crushed cashew nuts or almonds, mix well.
- Take the pan off the heat & let cool down.
- Make into round balls & enjoy.
- These balls can be stored in an air-tight container for a few days.
