Matta Rice- Kuthari Choru

Cabbage Egg Stir Fry, Muttakose Poriyal

Recipe

  • Oil- 2 tbsp
  • Mustard seeds- 1 tsp
  • Dried red chilies, halved- 2
  • Curry leaves- 1 sprig
  • Onion, chopped- 1
  • Green chilies, halved- 1 or 2
  • Cabbage, shredded- ½ of a medium cabbage
  • Water- ¼ cup
  • Eggs, beaten- 1 or 2
  • Ground black pepper- 1/4 tsp
  • Salt- 1½ tsp

Preparation

  1. It’s good to shred the cabbage in a food processor, will be even, cooks faster & looks good.
  2. Place a pan over medium heat, add oil and let turn hot.
  3. Add mustard seeds, let splutter.
  4. Add halved dried red chilies & curry leaves, saute for a few seconds.
  5. Add onions, green chilies and 1 tsp salt; saute till onions turn translucent.
  6. Add cabbage, combine well & add ¼ cup water, cook covered till cabbage has turned soft.
  7. Stir fry over high heat for a few minutes till the cabbage turns light golden brown.
  8. Slide the cabbage stir fry to one side of the pan to create some space.
  9. You can either beat the eggs well using a fork taken in a bowl or crack the eggs directly into the pan.
  10. Add the eggs & scramble the eggs.
  11. Add ½ tsp more salt & ground black pepper, combine with the cabbage & stir fry for a couple of minutes.
  12. Serve in a bowl.
  13. Enjoy as a side dish with rice, or wrap it in chapati, tortilla, rotis etc. Tastes delicious.
