Flavorful & delicious mutton chops curry…
Mutton chops cooked with a special homemade spice mix. I pressure-cooked this curry in the Instant Pot, sauteed shallots, ginger-garlic, sliced onions, tomatoes, added mutton chops & the aromatic spice mix. Pressure cooked for 25 minutes.
The beauty of mutton chops curry lies in the artful combination of spices & cooking till the mutton turns soft, a delightful dish that can be enjoyed with Kerala parotta, parathas, appam, etc.
- Fennel seeds- 1 tbsp (must add)
- Whole black peppercorns- 1 to 2 tsp, based on your spice level
- Dried red chilies- 3
- Whole cardamoms- 3
- Whole cloves- 2
- Whole cinnamon- 2-inch slice
- Coconut oil- 2 tbsp
- Ginger-garlic, crushed- 2 tbsp
- Dried bay leaves- 2
- Shallots, sliced- 3 large shallots or 8 small onions
- Onions, sliced thin- 2
- Green chilies, halved- 1 to 2
- Curry leaves- 1 sprig
- Tomatoes, chopped- 1
- Add the prepared spice mix
- Coriander powder- 1 tsp
- Turmeric powder- ⅛ tsp
- Salt- 1½ tsp
- Mutton chops- 8 chops
- Cilantro, chopped- ¼ cup
- I've taken 8 mutton chops, any kind of mutton pieces can be used.
- To a blender jar, add all the spices mentioned for making the homemade spice mix, grind to a fine powder, keep it aside.
- If you can handle the heat, add 2 to 3 tsp of whole black peppercorns.
- This spice mix can be made ahead of time & stored in an air-tight container.
- I'm using an Instant Pot for pressure cooking, or use a regular pressure cooker instead.
- Turn on saute setting, medium temperature.
- Let the stainless steel pot turn hot.
- Add coconut oil.
- Add 2 tbsp crushed ginger & garlic (3 garlic cloves & 2-inch slice ginger) & dried bay leaves, saute for a minute.
- Add the sliced shallots, or add small onions sliced.
- Add the sliced onions, season with 1 tsp salt & saute for 2 minutes.
- Add green chilies & curry leaves, combine well.
- Add chopped tomato, combine well, saute for 2 minutes.
- Add the prepared spice mix, combine well.
- Add coriander powder, turmeric powder & ½ tsp more salt, saute for a minute.
- Add the mutton chops, combine well.
- Ensure the pot hasn't turned brown.
- I didn't add water, while pressure cooking liquid will ooze out of mutton, onions & tomatoes.
- Close the pot with the lid.
- Cancel saute setting.
- Select pressure cook setting, set the time to 25 minutes at high pressure.
- After pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
- Open the lid, mutton chops will. be cooked perfectly.
- There will be some liquid in the pot.
- If you want the gravy to be thick, select saute setting & cook for 5 minutes till the gravy thickens.
- Garnish with chopped cilantro.
- Serve in a bowl & enjoy with parotta, chapati, poori, parotta, appam, palaada, etc.
