Jalfrezi is a popular Indian dish. It’s essentially a stir fry tomato-based dish seasoned with Indian spices & tomato sauce.  In the Instant Pot, this dish can be cooked in just 15 minutes.

Kashmiri chili powder & tomato paste will impart a deep red color, along with the peppers, chicken & Indian spices you’ll feel a burst of flavors in your mouth.

Ingredients
For cooking chicken
  • Boneless chicken breast, diced- 2 (or add thighs)
  • Chili powder- 1 tsp
  • Turmeric powder- ⅛ tsp
  • Salt- ½ tsp
  • Water- ¼ cup
For saute cooking
  • Oil- 1½ tbsp
  • Onion, diced- 1
  • Ginger, sliced- 1 tbsp
  • Garlic, chopped- ½ tbsp
  • Green pepper, diced- 1
  • Red pepper, diced- 1
  • Water- ¼ cup
  • Tomato paste- 5 tbsp (or add ½ cup tomato sauce/puree)
  • Kashmiri chili powder- 1 tsp
  • Coriander powder- ½ tbsp
  • Cumin powder- 1 tsp
  • Salt- ¾ tsp
  • Cooked chicken
  • Garam masala- ½ tsp
  • Cilantro, chopped- ¼ cup
Instructions
  1. To the stainless pot, add chicken along with chili powder, turmeric powder & salt; combine well.
  2. Add ¼ cup water as well, combine well.
  3. Close the pot with the lid.
  4. Select pressure cook setting, set time to 3 minutes at high pressure.
  5. After 3 minutes of pressure cooking, do a quick pressure release.
  6. Open the lid.
  7. Transfer the cooked chicken & the liquid in the pot to a bowl, keep it aside.
  8. Use the same stainless steel pot, keep it in the main pot.
  9. Select saute setting at normal or medium temperature.
  10. Add oil, add onion to the oil; saute for a minute.
  11. Add ginger & garlic, saute for 2 minutes.
  12. Add green & red peppers, cook for 3 minutes till the peppers turn soft.
  13. Add ¼ cup water, combine well.
  14. Add tomato paste, combine well & cook for 2 minutes.
  15. Add Kashmiri chili powder, coriander powder, cumin & salt, combine well.
  16. Add the cooked chicken & the liquid, combine well & cook for 2 minutes.
  17. Finally, add garam masala & cilantro, give a fabulous mix.
  18. Serve onto a bowl & enjoy with rice, roti, paratha, etc.
