Honestly, this week was pretty darn bad for me. I was in the holiday hangover and it was so hard for me to wake up early and go to school. In the morning, I rolled and rolled, snoozed the alarm a million times and tried to come up with all lame excuses to be under the blanket. So I wrapped up this week with Power Yoga. I felt so vivacious and rejuvenated after an hour long work out this evening. Hopefully, next week I would become that active person again.
Pakoras are famous Indian fried snack. Throughout India you could see street vendors frying pakoras and people snacking it along with hot tea. It’s also served in most of the Indian restaurants. I am so glad that pakoras are made with gram flour which means they are gluten free, so that my hubby can enjoy it without any second thoughts. I had already posted the recipe for Onion pakoras or fritters. Pakoras can be made with just onions or with mixed veggies. This time I made with spinach and mushroom, it tasted really good.
I also made a spicy yogurt sauce as the dipping sauce, pakoras along with the spicy yogurt sauce were darn yummy.
Spinach Mushroom Pakora Recipe
Ingredients
- Spinach leaves- 2 cups
- Mushrooms, chopped- 1 cup
- Onion, chopped-1
- Cumin seeds- 1 tsp
- Chili powder- 3/4 tsp
- Asafoetida (optional)- 1/4 tsp
- Gram flour- 1 cup
- Cilantro, chopped- 1/4 cup
- Salt- 1 tsp
- Water
- Oil- enough for frying
Gram Flour Batter
- Gram Flour- 2 cups
- Salt- 1/2 tsp
- Water- enough to hold the veggies
Instruction
- In a large bowl, combine spinach, mushrooms, onion, cumin seeds, chili powder, asafetida, salt, cilantro, and gram flour.
- Slowly add water till the veggies hold together well or till you can make balls out of the veggies.
- In another bowl, combine gram flour, salt and add enough water to make a thick batter. Make sure the batter is thick.
- Place a frying pan over medium heat, add oil, let turn hot.
- Make small balls out of the veggie mixture.
- Dip the veggie balls in the gram flour batter and coat well.
- Fry in hot oil till golden brown in color.
- Transfer to a paper towel.
- You could even fry the veggie balls without dipping in the gram flour batter, if so there wouldn’t be much gram flour coating, look at the two pakoras on the first picture, I fried those without dipping in the batter.
- When you dip it in the batter, it will turn more crispy.
Spicy Yogurt Sauce Recipe
- Yogurt- 1 cup
- Green chilies- 2
- Cilantro, chopped- 1/4 cup
- Salt- 3/4 tsp
Instruction
- In a blender, combine the above-mentioned ingredients to a smooth paste.
- Pour into a bowl and serve along with pakoras.
Tips:
- For making pakoras you could add any veggies of your choice: peas, broccoli chopped small, potato, etc
