Shrimp Stuffed Squid – Gourmet Recipe, Kerala Style

Squid & shrimp in one dish…

Shrimp stuffed squid is a delightful seafood dish that combines the delicate flavours and textures of shrimp and squid. The other day, I had both shrimp & squid in my freezer, my intention was to make a dish with these. So I made shrimp roast & stuffed in the squid tube, cooked the stuffed squid & then pan fried.

This dish is not only delicious but also presents beautifully, making it suitable for both everyday meals and special occasions.

Ingredients
  • Squid tubes- 5
  • Coconut oil- ¼ cup
Making shrimp roast
  • Coconut oil- 1 tbsp
  • Onions, chopped- 2
  • Ginger-garlic paste- ½ tbsp
  • Green chilies, chopped- 2
  • Curry leaves- 8 leaves
  • Tomato, chopped- 1
  • Kashmiri chili powder- 1½ tsp
  • Turmeric powder- ¼ tsp
  • Coriander powder- 2 tsp
  • Fennel powder- 1 tsp
  • Garam masala- ½ tsp
  • Salt- 1 tsp
  • Shrimp, deveined- 15
  • Cilantro, chopped- 2 tbsp
For making marinade
  • Kashmiri chili powder- 1 tbsp
  • Turmeric powder- ⅛ tsp
  • Salt- 1 tsp
  • Water- 3 tbsp
  • Curry leaves- 1 sprig
Instructions
Making shrimp roast
  1. Place a saucepan over medium heat, add coconut oil.
  2. Add onions, season with ½ tsp salt, saute for a minute.
  3. Add ginger-garlic paste, green chilies & curry leaves, saute till onions turn golden in color.
  4. Add tomato, cook covered till tomato has mashed up.
  5. Add all the above mentioned spices, combine well.
  6. Add the shrimp, cook covered for a few minutes.
  7. Open the lid, stir fry till all the liquid has dried out.
  8. Garnish with chopped cilantro.
  9. Take the pan off the heat & keep it covered.
Stuffing shrimp into squid
  1. I've taken 5 large squid tubes, wash the squid under running water.
  2. Pat dry the squid.
  3. Stuff 2 to 3 tbsp shrimp roast into the squid tubes.
  4. Close the opening with a toothpick.
  5. Place the shrimp stuffed squid to a saucepan.
  6. Add ½ cup water.
  7. Close the saucepan with a lid & cook over medium heat for 10 minutes.
  8. After 10 minutes, take the stuffed squid out of the pan & transfer to a plate.
  9. In a bowl, combine chili powder, turmeric powder, salt & add water make into a thick smooth paste.
  10. Spread the marinade over the cooked stuffed squid.
  11. Place a frying pan over medium heat, add ¼ cup coconut oil.
  12. Place the marinated stuffed squid on the oil.
  13. Pan fry till all the sides have turned golden brown.
  14. While pan frying, close the pan with a lid as there will be some spluttering.
  15. Transfer to a plate.
  16. Enjoy this absolutely delicious shrimp stuffed squid.
