Carrot Thoran Recipe
Ingredients
- Coconut Oil- 1 tbsp
- Mustard seeds- 1 tsp
- Whole dried red chilies- 2
- Curry leaves- 1 sprig
- Carrot, chopped small- 2
- Salt- 1 tsp
- Chili powder- ½ tsp
- Turmeric powder- ¼ tsp
- Grated coconut- 1/2 cup
Preparation
- To a hot pan, add oil, let turn hot.
- Add mustard seeds, let splutter.
- Add dried whole red chilies & curry leaves, saute for a few seconds.
- Add the carrot, season with salt & combine well.
- Add 1/2 cup water & cook covered till carrot has turned soft.
- After carrot has cooked well, add chili powder, turmeric powder and grated coconut.
- Saute for a few minutes till coconut turns golden in color.
- This is a dry dish.
- Take the pan off the heat & keep it covered.

I’ve added chili powder, turmeric powder & salt to the fish, let marinate for 15 minutes. Fry in coconut oil, add some curry leaves while frying.
