Ingredients
For making meatballs
- Ground beef- ½ lb
- Onion, chopped small- ½ of a medium-sized onion
- Italian seasoning- ½ tbsp
- Breadcrumbs- ½ cup
- Parmesan cheese- ½ cup
- Ground black pepper- ½ tsp
- Parsley, chopped- 2 tbsp
- Salt- 1 tsp
For making Soup
- Water or chicken stock- 6 cups
- Prepared meat balls
- Spinach chopped small- 1 cup
- Italian seasoning- ½ tbsp
- Orzo or pearl pasta- 1 cup
- Ground black pepper- ¼ tsp
- Parmesan cheese, grated- to top the soup
Instructions
- In a large bowl, combine all the ingredients to make the meat balls.
- You could use either ground beef or chicken or a combination of both.
- Make very small balls out of the meatball mixture, around 20 to 25 balls. Keep them aside.
- To the stainless steel pot, add water, spinach leaves, orzo pasta, Italian seasoning & ground black pepper.
- Gently drop the meatballs.
- Close the pot with the lid.
- Select pressure cook setting, set the time to 3 minutes at high pressure.
- After pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
- Open the lid.
- Serve into a soup bowl, if needed sprinkle with grated parmesan cheese and enjoy every sip of it.
