- Onion, chopped- 1
- Zucchini, diced- 2
- Egg plant, diced- 1
- Green pepper, diced- 1
- Red pepper, diced- 1
- Tomatoes, chopped- 2
- Garlic, chopped- 3 cloves
- Ground black pepper- ½ tsp
- Salt- 1 tsp
- Parsley- 2 tbsp
- Thyme- 1 tbsp
- Basil- 2 tbsp
- Dried bay leaves- 2
- To the stainless steel pot, add all the veggies & herbs, combine well.
- Close the pot with the lid.
- Select pressure cook setting, set the time to 2 minutes at high pressure.
- After pressure cooking, do a quick pressure release.
- Open the lid.
- Serve in a bowl & enjoy with toasted bread.
