Spicy Chicken Curry - Kerala Style

Ingredients
- Coconut oil- 2 tbsp
- Ginger and Garlic, minced- 1 tbsp
- Coriander powder- 2 tbsp
- Kashmiri red chili powder- 2 tbsp (adjust accordingly)
- Chicken masala- ½ tbsp
- Onions, chopped- 2, large
- Small onions, chopped- 12
- Curry leaves- 1 sprig
- Green chili, chopped-6
- Tomatoes, chopped- 2
- Chicken pieces, bone-in- 1 kg
- Yogurt- 100 ml
- Garam masala- 1 tsp
- Black pepper powder- 1 tsp
- Fennel powder- 2 tsp
- Cinnamon- 2 inch slice
- Curry leaves- 1 sprig
- Salt- to taste
Instructions
- Add oil to a large pan, add minced ginger-garlic, saute for a minute.
- Add coriander powder, Kashmiri red chili powder, chicken masala, saute for 2 minutes.
- Add chopped onions, small onions, green chilies, curry leaves and salt. Cook till onions start to turn brown.
- Add tomatoes, cook for a few minutes.
- Add the chicken pieces, combine well and cook for 5 minutes.
- Add salt to taste.
- Add yogurt, garam masala, black pepper powder, fennel powder and cinnamon, combine well and cook covered till chicken has cooked well.
- Taste and add more more salt if needed.
- Open the lid, combine well, add curry leaves and cook till the gravy thickens.
- Serve with chapati, poori, pathiri, rice etc.
