Rich, moist & delicious Plum cake or Fruit cake…

This is a popular cake baked for holidays & enjoyed by everyone. This cake is loaded with candied dried fruits & nuts. The dried fruits & nuts are soaked in orange juice for an hour. Orange juice will make this cake refreshing. The aromatic spices added to the flour will impart a nice fragrance. This cake will make us slip into the festive spirit.

Rich & Moist Plum Cake -Fruit Cake Recipe- For Christmas- Without Alcohol

Ingredients
For Soaking
  • Chopped dates- ½ cup
  • Candied dried fruits/cherries or Tutti Frutti- ½ cup
  • Chopped nuts- ½ cup (almonds, cashew nuts, pecans, walnuts)
  • Orange juice- 1 cup
Dry ingredients
  • All-purpose flour- 1 cup
  • Baking powder- 1 tsp
  • Baking soda- 1 tsp
  • Nutmeg- ¼ tsp
  • Ground cinnamon- ¼ tsp
  • Ground dried ginger- ¼ tsp
  • Salt- ¼ tsp
Wet Ingredients
  • Butter, unsalted & softened- ¼ cup (1 stick)
  • Brown sugar- ¾ cup
  • Egg yolk- from 2 eggs
  • Egg whites- from 2 eggs, whipped
Optional ingredient
  • Cashewnuts- 6, to top the cake batter
Instructions
  1. In a bowl, combine all the ingredients mentioned 'for soaking', and soak for an hour. Overnight soaking is not required.
  2. Preheat the oven to 325 F or 160 C.
  3. Into a bowl, sieve all the dry ingredients; keep aside.
  4. Separate the egg yolks & whites from 2 eggs at room temperature.
  5. In a bowl, using an electric hand mixer- beat the softened butter for 3 to 4 minutes.
  6. Add brown sugar, beat for 2 minutes.
  7. Add egg yolks, beat till creamy.
  8. Add the prepared flour mix or dry ingredients.
  9. Beat at low speed for 2 minutes.
  10. Add the soaked dried fruits & nuts in orange juice.
  11. Beat at low speed for 2 minutes.
  12. Keep aside.
  13. In a bowl, whip the egg whites (from 2 eggs) at high speed till soft peaks are formed.
  14. Add the whipped egg whites to the cake batter.
  15. Combine well using a silicone spatula till well incorporated.
  16. Use a 6 inch or 8 inch cake pan.
  17. (Don't use springform pan- liquid will drip through the sides from the batter while baking).
  18. Grease the cake pan with butter, line with parchment paper.
  19. Pour the cake batter.
  20. Tap the pan to release the air bubbles.
  21. Top with cashewnuts, this is optional.
  22. Place the cakepan in the preheated oven, on the middle rack.
  23. Bake for first 45 minutes, check if the center has cooked well by inserting a fork into the center of the cake.
  24. If not, bake for another 15 minutes, kept on the upper rack.
  25. I had to bake this cake for an hour.
  26. Let the cake cool down completely.
  27. Cut into wedges and enjoy.
