A unique twist on a beloved Kerala classic Puttu: Oats Cauliflower Shrimp Puttu, healthy & delicious…
For those unfamiliar, puttu is a traditional Kerala steamed rice cake, typically made from coarsely ground rice and coconut, layered and steamed to perfection. However, in this recipe, I’m bringing a healthy twist to the classic by incorporating oats, cauliflower, and shrimp.
This not only makes the dish healthier but also adds a delightful burst of flavor and texture. Let’s dive into this fusion recipe that’s sure to become a favorite in your kitchen.
- Coconut oil- 1 tbsp
- Onions, chopped- 2
- Ginger-garlic paste- ½ tbsp
- Curry leaves- 8 leaves
- Salt- 1½ tsp
- Tomato, chopped- 1
- Shrimp, deveined & shelled- 15
- Kashmiri chili powder- 1½ tsp (or add regular hot chili powder)
- Turmeric powder- ¼ tsp
- Coriander powder- 2 tsp
- Garam masala- ½ tsp
- Coconut oil- 1 tbsp
- Mustard seeds- 1 tsp
- Dried red chilies- 2
- Curry leaves- 8 leaves
- Shallots, chopped- 2 large sized
- Grated cauliflower- 2 cups
- Salt- 1 tsp
- Water- 3 tbsp
- Oats- 1 cup (ground steel cut or instant oats)
- Salt- ⅛ tsp
- Water- 2 tbsp
- Grated coconut
- First, let's make shrimp roast. Prawns can also be used.
- Place a saucepan over medium heat, add oil.
- Add chopped onions, season with ½ tsp salt, combine well.
- Add ginger-garlic paste & curry leaves, saute till onions turn golden in color.
- Add tomato, cook till tomato has slightly mashed up.
- Add chili powder, turmeric powder, coriander powder, garam masala & salt; combine well.
- Add shrimp or prawns, combine well.
- Cook covered till shrimp has cooked through.
- Open the lid, stir fry over high heat till all the liquid has dried off.
- This is a dry roast, take the pan off the heat & keep it aside.
- Next, let's make cauliflower stir fry.
- I've taken half of a medium sized cauliflower, add the florets to a food processor & grate it.
- Place a pan over medium heat, add oil.
- Add mustard seeds, let splutter.
- Add dried red chilies & curry leaves, saute for a few seconds.
- Add chopped shallots & salt, saute for a minute.
- Add grated cauliflower, combine well.
- Add 3 tbsp water & cook covered till cauliflower turns slightly soft.
- Stir fry over high heat for a few minutes.
- Take the pan off the heat & keep it aside.
- In a bowl, add oats- I've taken coarsely ground steel cut oats, instant oats can also be used.
- Add salt & 2 tbsp water, combine well using your hand.
- We just have to wet the oats, don't add a lot of water oats will turn mushy.
- I've used the puttu maker that can be placed on the whistle hole of the pressure cooker.
- Place the disc into the puttu maker.
- Add 1 tbsp grated coconut on the disc, top with a handful of wet oats.
- Add a handful of cauliflower stir fry over the oats.
- Add 2 tbsp shrimp roast over the cauliflower.
- Again, add oats & cauliflower.
- Topmost layer should be 1 tbsp grated coconut.
- Close with the lid.
- Add 2 cups water to a pressure cooker.
- Place the pressure cooker over medium heat & let steam release from the pressure cooker hole.
- Place the puttu maker on the whistle hole.
- Let steam cook for 3 minutes till steam released from all the holes on the puttu maker lid.
- Take the puttu maker of the pressure cooker, open the lid.
- Flip it over to a plate.
- Enjoy this healthy & delicious oats cauliflower shrimp puttu with pappad.
