Indulging in ulli vada, also known as onion fritters…
Today started with a bright and sunny morning, but it quickly turned bitterly cold as the wind picked up and heavy snowfall began. When I finally arrived home, my first instinct was to warm up with a hot beverage. After enjoying a cup of coffee, I found myself craving some fried snacks. Initially, I felt too lazy to cook, but to my surprise, my husband also expressed a desire for a snack at the same time. Unable to resist his request, I eagerly headed to the kitchen with the intention of making ulli vada or onion fritters.
With my favorite music playing in the background, I started the process of frying the onion fritters (Ulli Vada). As they emerged from the hot oil, perfectly crispy and crunchy, both my husband and I indulged in them. We devoured the entire plate of fritters and then lounged on the couch, enjoying more music together.
Ulli vada, a beloved snack in Kerala, is renowned for its simplicity, requiring only a handful of basic ingredients. It is a common evening treat in many Kerala households, often savored alongside a comforting cup of tea.
Ulli Vada Or Onion Fritters
Ingredients, Makes 9 fritters
- Onions, sliced thin- 3
- Ginger, grated- 1 tsp
- Green chilies, chopped- 2
- Chili Powder- 1/2 teaspoon
- Gram flour or Besan- 1/2 cup
- Curry leaves, chopped- 10 leaves
- Salt- 1 1/2 tsp
- Coconut Oil- enough for frying
Instruction:
- This recipe will make 9 fritters, double or triple the ingredients to make a large batch.
- I used yellow onions for making this, you can also use red onions.
- Slice the onions thin & long or use a food processor with a slicer blade.
- It’s better to slice the onions rather than chop them, the fritter texture will be awesome.
- In a bowl add the onions, using your clean hands mix the onions well.
- To the onions all the above-mentioned ingredients except oil.
- Water is not required, moisture from the onions will help to bind well.
- Place a frying pan over medium heat, add enough oil for frying & let the oil turn hot.
- Take a handful of the mixture & gently form a round shape, it will be sticky & doesn’t have to be a perfect round shape.
- Drop into the oil.
- Avoid crowding in the oil.
- Fry till the fritters turn golden brown on both sides.
- Using a splotted spoon take the fritters out of the oil & transfer them to a plate lined with a kitchen paper towel.
- Enjoy ulli vada or fritters with tomato ketchup.
