Instant Pot Asparagus-Red Lentil Healthy Soup- Dump & Go Recipe

Ingredients
- Onion, chopped- 1
- Garlic, chopped- 2
- Asparagus, chopped- 9
- Red lentil, rinsed- 1 cup
- Ground cumin- 1 tsp
- Paprika- 1 tsp
- Ground black pepper- ½ tsp
- Dried Oregano- 1 tsp
- Salt- 1½ tsp
- Water or Chicken stock or Veggie stock- 3 cups
- Green onions, chopped- ¼ cup
- Cilantro, chopped- 2 tbsp
Instructions
- Chop off the tough ends from the asparagus & roughly chop the asparagus.
- Into the stainless steel pot, add all the ingredients except green onions & cilantro.
- Instead of water, chicken stock or veggie stock can be added.
- Close the pot with the lid.
- Select pressure cook setting, set time to 5 minutes at high pressure.
- After 5 minutes of pressure cooking, do a quick pressure release.
- Combine well.
- Using a hand blender, coarsely puree the soup. Or transfer to a blender jar & puree coarsely.
- Garnish with green onions & cilantro.
- Serve into soup bowls, sprinkle paprika over the soup.
- Enjoy with pita chips or bread.
