
Moringa-Drumsticks & Shrimp- Chemmeen together tastes delicious.
One of the combinations I love the most is moringa & shrimp. I make curries and stir fries with them. This time I made this Kerala style aviyal.
Aviyal is a traditional Kerala vegetarian dish made with mixed vegetables & ground coconut. It’s one of the dishes served in Sadhya.
I used the similar aviyal recipe: cooked the shrimp, moringa & raw mangoes, added ground coconut & cooked for a few minutes. Turned out delicious & I enjoyed it with Kerala matta rice.
- Grated coconut- ¾ cup
- Cumin seeds- 1 tsp
- Garlic cloves- 2
- Turmeric powder- ¼ tsp
- Shrimp or Prawns- 10 Shrimp
- Moringa or Drumsticks, cut into 3 inches- 10
- Raw Mango, diced- 1
- Green chilies, halved- 2
- Curry leaves- 1 sprig
- Salt- to taste
- I've used frozen moringa or drumsticks, available at the Indian stores.
- You can either use shrimp or prawns.
- To a blender jar, add the above mentioned ingredients 'to grind coconut'.
- Grind to a a coarse paste.
- To a claypan: add shrimp, drumsticks, diced raw mango, green chilies, curry leaves and salt. Combine well.
- Place over medium heat & cook covered till moringa & shrimp have cooked well.
- Add the ground coconut, mix well and cook for a few minutes.
- Take the claypan off the heat & keep it covered for a few minutes.
- Enjoy this as a side dish along with rice or chapati.
