Healthy Lunch Recipe Ideas 2 - Lentil Soup, Pan Fried Chicken & Roasted Broccoli

Ingredients
For making lentil soup
  • Red lentil, rinsed- 1 cup
  • Onion, chopped- 1
  • Carrot, chopped- 1
  • Potato, chopped- 1
  • Ground cumin- ½ tsp
  • Turmeric powder- ½ tsp
  • Ground black pepper- ¼ tsp
  • Ground allspice- ½ tsp
  • Salt- 1½ tsp
  • Chicken, vegetable stock or water- 4 cups (if adding water, add 1 chicken bouillon cube)
For topping
  • Lemon juice
Instructions
  1. I cooked this in the Instant pot & is a dump & go recipe, so don't have to saute the veggies.
  2. Or use a regular pressure cooker.
  3. For making a large batch, double or triple the recipe.
  4. Turn on the Instant Pot.
  5. To the stainless steel pot, dump all the ingredients mentioned for pressure cooking.
  6. Chicken or vegetable stock can be added.
  7. If adding water, also add 1 chicken bouillon cube.
  8. Combine well, close the pot with the lid.
  9. Select pressure cook setting, set the time to 10 minutes at high pressure.
  10. After pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
  11. Open the lid, combine well.
  12. Potato added will make this soup thick & creamy along with the red lentil, taste delicious.
  13. Serve in soup bowls.
  14. Drizzle ½ tsp freshly squeezed lemon juice.
  15. Enjoy this comforting & hearty soup.

 

Pan Fried Chicken Thighs

Ingredients
  • Chicken thighs- 2 or 4, bone-in
  • Ground all spice- 1 tsp
  • Ground black pepper- ½ tsp
  • Paprika- ½ tsp
  • Salt- 1 tsp
Instructions
  1. I've taken bone-in chicken thighs, you can also use chicken legs or boneless chicken breasts.
  2. To the chicken, add the spices & salt, combine well.
  3. Any kinds of spices & seasonings can be added.
  4. Place a cast iron skillet over medium heat, add 1 tbsp olive oil.
  5. Place the seasoned chicken & cook covered for a few minutes, liquid will ooze out of the chicken.
  6. Flip it over & cook the other side.
  7. I add ¼ cup water & cook covered till the chicken has cooked well.
  8. Open the lid & cook till both sides have turned golden brown.
  9. Transfer to a plate, if you prefer drizzle freshly squeezed lemon juice.
  10. Enjoy

Ingredients
  • Olive oil- 1 tbsp
  • Garlic, chopped- 3 cloves
  • Dried red chili flakes- 1 tsp
  • Shallots, sliced- 3 large shallots or 1 onion
  • Broccoli florets- 1 broccoli
  • Soy sauce- 2 tbsp
  • Hoisin sauce- 2 tbsp (optional)
  • Ground black pepper- ¼ tsp
Instructions
  1. Place a saucepan over medium heat, add oil.
  2. Add chopped garlic, saute till light golden in color.
  3. Add dried chili flakes, saute for a few seconds.
  4. Add shallots, saute till shallots turn golden in color.
  5. Add broccoli florets, combine well.
  6. Add ½ cup water, cook covered till broccoli has turned soft.
  7. Add soy sauce & hoisin sauce, combine well.
  8. Add ground black pepper, and stir fry over high heat for a few minutes.
  9. Transfer to a bowl.
