Healthy Lunch Recipe Ideas 2 - Lentil Soup, Pan Fried Chicken & Roasted Broccoli

Ingredients
For making lentil soup
- Red lentil, rinsed- 1 cup
- Onion, chopped- 1
- Carrot, chopped- 1
- Potato, chopped- 1
- Ground cumin- ½ tsp
- Turmeric powder- ½ tsp
- Ground black pepper- ¼ tsp
- Ground allspice- ½ tsp
- Salt- 1½ tsp
- Chicken, vegetable stock or water- 4 cups (if adding water, add 1 chicken bouillon cube)
For topping
- Lemon juice
Instructions
- I cooked this in the Instant pot & is a dump & go recipe, so don't have to saute the veggies.
- Or use a regular pressure cooker.
- For making a large batch, double or triple the recipe.
- Turn on the Instant Pot.
- To the stainless steel pot, dump all the ingredients mentioned for pressure cooking.
- Chicken or vegetable stock can be added.
- If adding water, also add 1 chicken bouillon cube.
- Combine well, close the pot with the lid.
- Select pressure cook setting, set the time to 10 minutes at high pressure.
- After pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
- Open the lid, combine well.
- Potato added will make this soup thick & creamy along with the red lentil, taste delicious.
- Serve in soup bowls.
- Drizzle ½ tsp freshly squeezed lemon juice.
- Enjoy this comforting & hearty soup.
Pan Fried Chicken Thighs

Ingredients
- Chicken thighs- 2 or 4, bone-in
- Ground all spice- 1 tsp
- Ground black pepper- ½ tsp
- Paprika- ½ tsp
- Salt- 1 tsp
Instructions
- I've taken bone-in chicken thighs, you can also use chicken legs or boneless chicken breasts.
- To the chicken, add the spices & salt, combine well.
- Any kinds of spices & seasonings can be added.
- Place a cast iron skillet over medium heat, add 1 tbsp olive oil.
- Place the seasoned chicken & cook covered for a few minutes, liquid will ooze out of the chicken.
- Flip it over & cook the other side.
- I add ¼ cup water & cook covered till the chicken has cooked well.
- Open the lid & cook till both sides have turned golden brown.
- Transfer to a plate, if you prefer drizzle freshly squeezed lemon juice.
- Enjoy
Roasted Soy Broccoli

Ingredients
- Olive oil- 1 tbsp
- Garlic, chopped- 3 cloves
- Dried red chili flakes- 1 tsp
- Shallots, sliced- 3 large shallots or 1 onion
- Broccoli florets- 1 broccoli
- Soy sauce- 2 tbsp
- Hoisin sauce- 2 tbsp (optional)
- Ground black pepper- ¼ tsp
Instructions
- Place a saucepan over medium heat, add oil.
- Add chopped garlic, saute till light golden in color.
- Add dried chili flakes, saute for a few seconds.
- Add shallots, saute till shallots turn golden in color.
- Add broccoli florets, combine well.
- Add ½ cup water, cook covered till broccoli has turned soft.
- Add soy sauce & hoisin sauce, combine well.
- Add ground black pepper, and stir fry over high heat for a few minutes.
- Transfer to a bowl.
