Ingredients
For making lentil soup
  • Red lentil, rinsed- 1 cup
  • Onion, chopped- 1
  • Carrot, chopped- 1
  • Potato, chopped- 1
  • Ground cumin- ½ tsp
  • Turmeric powder- ½ tsp
  • Ground black pepper- ¼ tsp
  • Ground allspice- ½ tsp
  • Salt- 1½ tsp
  • Chicken, vegetable stock or water- 4 cups (if adding water, add 1 chicken bouillon cube)
For topping
  • Lemon juice
Instructions
  1. I cooked this in the Instant pot & is a dump & go recipe, so don't have to saute the veggies.
  2. Or use a regular pressure cooker.
  3. For making a large batch, double or triple the recipe.
  4. Turn on the Instant Pot.
  5. To the stainless steel pot, dump all the ingredients mentioned for pressure cooking.
  6. Chicken or vegetable stock can be added.
  7. If adding water, also add 1 chicken bouillon cube.
  8. Combine well, close the pot with the lid.
  9. Select pressure cook setting, set the time to 10 minutes at high pressure.
  10. After pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
  11. Open the lid, combine well.
  12. Potato added will make this soup thick & creamy along with the red lentil, taste delicious.
  13. Serve in soup bowls.
  14. Drizzle ½ tsp freshly squeezed lemon juice.
  15. Enjoy this comforting & hearty soup.
