Refreshing Asian style cucumber salad…
Clearly, I am not designed to live in hot summer. I am so glad that I live in a place where we have only a few months of summer. It only gets really hot for a few weeks after that it’s very mild. Still, this mild summer is making me sick. Having visited Dubai in 2010 during summer, I now know how an extremely hot summer feels like. It was around 60 degrees celsius there during August. If you stand outside in the Sun for a few minutes, you’ll faint. However, I didn’t want to miss taking pictures infront of Burj Al Arab and the tallest building Burj Khalifa, so had to be out just to pose for and click pictures. I was literally screaming, after I was done clicking I rushed into the car to keep myself cool. After that I kinda stopped complaining about the summer in N.America especially in the mid west and east coast. It’s nothing compared to Middle East. Well, the only problem I find here is since the indoors are cold, our body has to deal with the sudden temperature change when you go outside. And that’s exactly what is making me sick in summer. I tried to skip consulting the doctor, but in vain. My sinus got worse, so had to consult the doctor today. I was asked to wear the mask for the entire time I was at the hospital. After the consultation, the doc advised me to take good rest, drink a lot of fluids and after 2 weeks or so my sickness would fade away. Well, I had to insist the doc to give me some antibiotics as I cannot afford to be sick this week and the coming weeks. Quick relief is what I want now. Finally, the doc prescribed me some medicines, hopefully I will feel better soon.
Doesn’t it feel good to have something refreshing during summer? Last weekend, I made this salad with cucumber. Cucumber is an excellent veggie to have during summer; it cools you off, refreshes you and quenches your thirst. I like to eat raw cucumber rather than cooking it. Also, I like to keep the cucumber over my eyes, it soothes me and makes my eyes look fresh. Whenever my hubby says his eyes are stressed out, I give him cucumber for an instant relief and it works like a magic. This is an asian style cucumber salad that can be served with spring rolls, cutlets, chicken satay etc. It’s lil spicy, sweet and tangy and refreshing…
Asian Cucumber Salad
Ingredients
- Cucumber- 1, julienne it or cut into thin long strips that resembles to matchstick
For making sauce:
- Honey- 1 tbsp
- Soy sauce, low-sodium- 2 tbsp
- Dry red chili flakes- 1 tsp
- Green onion, chopped very small- 2 tbsp
- Cilantro chopped very small- 2 tbsp
- Tamarind juice- 1 tbsp (1 inch slice fresh tamarind soaked in 1 tbsp warm water)
- Salt- a few pinches
Instruction
- Julienne the cucumbers or cut into thin long strips.
- In a bowl, combine all the ingredients mentioned above for ‘making the sauce’.
- Pour the sauce over the cucumber and combine well.
- Keep the salad covered for sometime so that the flavors from the sauce gets into the cucumber.
- Serve with spring rolls, cutlets etc.
Tips:
- This salad is little spicy, you can adjust it by adding less or more of the dry red chili flakes.
- If you are using concentrated tamarind paste, use very less according to your needs.
