Air fried chicken biryani cooked in the Instant Pot…
Let your taste buds go wild. Make this scrumptious chicken biryani in the Instant Pot. After pressure cooking the chicken it has been air fried, that way chicken will have the fried taste & beautiful brown color. Along with incredibly aromatic & flavorful basmati rice. Will be ready in just 30 minutes, tastes absolutely delish.

Ingredients
For marinating chicken
- Chicken legs or bone-in pieces- 7 or 8
- Ginger-Garlic paste- 1 tbsp
- Chili powder-2 tsp (or add 1 tbsp Kashmiri chili powder)
- Turmeric powder- ½ tsp
- Coriander powder- 2 tbsp
- Garam Masala- 1 tsp
- Lemon juice- 2 tbsp
- Yogurt- 3 tbsp
- Salt- 1½ tsp
For pressure cooking chicken
- Ghee- 3 tbsp
- Dried bay leaves- 2
- Whole cardamom- 4
- Onion, sliced thin- 4
- Tomato, chopped- 1
- Water- 1 cup
- Cilantro, chopped- ¼ cup
- Fresh mint leaves, chopped- 6 leaves
- Salt- ½ tsp
For pressure cooking rice
- White Basmati Rice- 2½ cups
- Water- 1¼ cups
- Mint leaves, chopped- 2 tbsp (Must add)
- Cilantro, chopped- ¼ cup
- Garam masala- 1 tsp
- Fried onion- ¼ cup (optional)
- Saffron- 10 strands
- Ghee- 1 tbsp
- Salt- 1 tsp
For garnish
- Fried onions- ½ cup
- Roasted cashew nuts or almonds- ¼ cup
- Roasted raisins- 2 tbsp
Instructions
- I've taken chicken legs, any bone-in chicken pieces can be used.
- Using a sharp knife, add lines on the flesh.
- In a large bowl, combine the chicken along with the above mentioned ingredients ' for marinating chicken'. Combine well, let marinate for 2 to 3 hours or overnight.
- In a bowl, soak the basmati rice in water, let soak for 15 minutes.
- After 15 minutes of soaking, drain the water into a strainer & rinse the rice in water.
Pressure Cooking Chicken
- Turn on the Instant Pot.
- Click saute setting, temperature should be medium or normal.
- Let the stainless steel pot turn hot.
- Add ghee, bay leaves and whole cardamom, saute for a few seconds.
- Add onions, season with ½ tsp salt. Saute for a few minutes till onions turn translucent.
- Add tomato, saute for 2 minutes.
- Ensure onions are not browned and the bottom of the stainless steel pot hasn't turned brown.
- Add the marinated chicken, combine well.
- Rinse the bowl used for marinating chicken with 1 cup water & add that to the pot.
- Close the pot with the lid.
- Cancel saute setting.
- Select Pressure cook setting, set time to 5 minutes at high pressure.
- After 5 minutes of pressure cooking let the pressure release naturally for 5 minutes & then do a quick pressure release.
- Open the lid.
- Using a tong, take the chicken out of the pot, transfer to a plate.
Air Frying Chicken
- I've used Instant Pot Duo Crisp + Air fryer for air frying the chicken.
- Place the stainless steel pot into the main pot, place the air fryer basket & broil tray into the air fryer basket.
- Grease the broil tray with some oil.
- Place the pressure cooked chicken on the broil tray.
- Drizzle some oil on the chicken.
- Close the pot with the air fryer lid.
- Select air fry setting, temperature 400 F, time 15 minutes.
- After 15 minutes of air frying, take the chicken out of the air fryer. Keep it covered.
Pressure Cooking Basmati Rice
- After pressure cooking the chicken, there will be around 1½ cups of chicken gravy in the pot.
- Add 1¼ cups additional water.
- Add the soaked & rinsed basmati rice, combine well.
- For cooking 2½ cups rice there should be 2¾ cups liquid in the pot ( it is 1 : 1¼ cups rice : water ratio in the Instant Pot).
- Add mint leaves, chopped cilantro, fried onions, garam masala, salt & ghee. Combine well.
- Close the pot with the lid.
- Select Pressure cook setting, set time to 6 minutes at high pressure.
- After 6 minutes of pressure cooking let the pressure release naturally for 5 minutes & then do a quick pressure release.
- Open the lid.
- Perfectly cooked & fluffy basmati rice is ready.
Assembling Biryani
- On a platter, layer the cooked basmati rice.
- Top with air fried chicken.
- Garnish with fried onions, roasted cashew nuts or almonds & roasted raisins.
- Serve along with raita, pickle, pappad etc.
- This is an absolutely delicious biryani, tastes better the next day.
- Any leftover can be stored in the refrigerator.
