Tomato Shrimp – Tasty Appetizer

Easy to make and delicious shrimp appetizer…

I will be soon wrapping up my research work and my academic life is coming to a glorious end, unbelievable! It’s been two years since I have been in the academic field, I thoroughly enjoyed it. I’ve started writing my thesis, have to get it ready by the mid of July. It’s going to be a whirlwind ride in the coming few weeks. I love writing, certainly not thesis. For the past couple of day I’ve been trying to write it, haven’t yet gotten into the right track. Hopefully I can finish it in time, fingers crossed…

When I feel frustrated, I try to relax in the evening by cooking something new and different. This way I can stop thinking about the things that worries me at least for sometime. So, yesterday after I came back from work I started making Black forest cake. The chocolate cake came out of the oven baked perfectly and I was so delighted seeing the texture of the cake. I usually make whipped cream from scratch, today I thought of trying the store bought one that comes in aerosol cans. After I layered the cake with strawberry filling, I started frosting the cake with the canned whipped cream. What can I say? It turned out to be a disaster. After frosting the cake, the whipped cream started to melt and it got messy. I got really mad and somehow managed to clean the mess. I then asked my man to buy the whipping cream. He was sweet enough to go to the store right away and he came back with the same canned whipped cream that I had used and not the whipping cream. I didn’t have a choice, so I kept my hopes high and decided to frost the cake with it one more time. This time, I shook the can vigorously and frosted on the cake. It looked really good and firm, but only for 5 minutes. After that it started to melt. Argh! I even dipped the strawberries in chocolate to top on the cake. Anyway, calmed me down by saying “this is not the end of the world” and enjoyed the cake along with the melted whipped cream frosting and the chocolate strawberry made everything special…

Well, here is the picture of the cake before the whipped cream started to melt, this is just half done I was planning to make it very pretty 🙁

After the cake disaster, I started making my dinner. I wasn’t up for any major cooking obviously. So, made this easy dish with shrimp. It turned out really delicious. This can be served as an appetizer or can be topped on your favorite salads or burgers or what not.

Tomato Shrimp

Ingredients

To marinade:

  • Shrimp, jumbo- 15
  • Paprika- 2 tsp
  • Garam masala- 1 tsp
  • Ground pepper- 1/4 tsp
  • Salt- to taste
For cooking:
  • Olive oil- 3 tbsp
  • Green onions- 2 stalk, chopped long
  • Water- 2 tbsp
  • Tomato Sauce- 3 tbsp
  • lemon juice- 2 tsp

Instruction

  • Marinate the shrimp with paprika, garam masala, ground pepper and salt for 15 minutes.
  • Heat a non-stick pan, add olive oil.
  • Spread the shrimp over the oil and fry till light brown in color.
  • Add green onions, saute for a couple of minutes.
  • Add water and cook for a minute.
  • Add tomato sauce and cook till the sauce thickens and has coated well on the shrimp.
  • Drizzle the lemon juice, saute for a minute and dish it out.
  • If you want you could insert toothpick on each shrimp while serving.

Tips:

  • Adjust the spice level according to your needs
