Fire up the grill and make this uber delicious pizza!!!
Howdy folks? Hope everyone had a lovely weekend and having a great week as well. I had a shopping spree last weekend, shopped for art works, portraits, indoor plants etc etc. It’s been almost 2 months since we moved to our new house and still we haven’t done with all the furnishing. We both are quite picky about furnitures and other things so have been researching and shopping around a lot. The most amazing thing is that my house is situated away from the hustle and bustle of the city, cuddled by nature. It’s about 10 minutes away from the city, drive to my place is a scenic drive with the views of woods, creeks and farm lands. Last weekend, despite of the heavy rain, I explored the nearby places and I was thrilled to find out that Apple orchard, horseback riding trails and camp sites are only minutes away from my house. Well, this is a dream come true!!!
Having said that, I do have an obsession for city life as well as I love crowd and vigor. While in Chicago I lived very close to the city and had enjoyed it thoroughly. So, definitely I am a mix of city and country.
Also, last weekend I was so enthusiastic about cooking and experimenting different dishes. One of the dishes I am so deeply in love is this grilled naan pizza. After a long time, I had bought tandoor naan, thought I could have that with grilled chicken. When I bought that I didn’t have any intention to make pizza with that. Things changed as I entered my kitchen, naan looked more like a pizza base to me and couldn’t think about anything but PIZZA!
I had already mentioned that my latest obsession has been sun dried tomatoes. It’s such a versatile ingredient, throw it into anything and it would make that dish taste remarkable. For making pizza sauce, I pureed sun dried tomatoes (in olive oil and herbs). I also marinated a few large brown mushrooms and fennel with the sun dried tomato paste. Grilled the veggies and topped them on the naan pizza and topped with cheese. Placed the naan on the cedar plank and grilled it for a few minutes. Since it’s grilled pizza, I needed the grill mark on the pizza, so after grilling it on the plank, I then placed the pizza or naan pizza to be precise directly on the grill (low flame) for couple of minutes and there I had the grill marks. Tasted absolutely delicious, sun dried tomato sauce gave a very distinct and nice aroma and flavor to the pizza. Grilled mushrooms and fennel were so delicious.
Fire up your grill and make this for the next barbecue or out door party, this is going to be a winner!!!
Grilled Sun dried tomato Naan Pizza topped with grilled Mushrooms and Fennel
Ingredients
- Store bought Naan (made in tandoor)- 3 or depending on your needs ( or use already baked pizza base)
- Large brown mushrooms- 3
- Fennel, cut thin and long- 1
- Cheddar cheese or mozzarella cheese or a blend of different cheeses
For making sauce:
- Sun dried tomatoes (in olive oil and herbs)- 20, drain the oil
- Water- 1/4 cup or enough to make a thick paste
Instruction
- In a blender, puree the sun dried tomatoes along with water to a smooth paste.
- Marinate the mushrooms and fennel with few tablespoons of sun dried tomato paste and keep aside for 5 minutes.
- Grease the grill with non-stick cooking spray.
- Place the mushrooms on the grill with medium flame, cover the grill and grill till it turns tender, flip it to the other side as well.
- Place the marinated fennel on an aluminum foil, place the aluminum foil on the grill, cover the grill and grill for a few minutes till it has turned tender.
- Remove the mushrooms from the grill and chop it into slices.
- Remove the grilled fennel and keep aside.
- Spread the naan evenly with rest of the sun dried tomato paste.
- Top with grilled mushrooms and fennel.
- Sprinkle generously with cheese.
- Place the naan on a cedar plank (available in most stores)
- Place on the grill, cover it and let grill for 10 minutes or till the cheese has melted.
- To make grill marks on the bottom side of the naan pizza: After the cheese has melted, lower the flame to very low or turn off the grill and place the naan pizza directly on the grill for 2-3 minutes till the grill mark appears. Make sure not to burn the bottom side.
- Serve hot immediately.
Tips:
- Use baked pizza crust instead of naan.
- You could top any of your favorite veggies and cheese or top with chicken cooked with sun dried tomatoes.
