Simple, flavorful and delicious chicken dish…
One of the seasonings that’s always found in my pantry is cajun seasoning. When any of my dishes taste blant, I add a few dash of cajun seasoning and it turns into a flavorful dish. Cajun seasoning is a blend of many flavorful spices and I like the instant spice kick it gives to the dishes. The other day, I made this pan fried cajun chicken. Also, sautéed onions and cherry tomatoes in the same pan after frying the chicken. A succulent chicken dish, very flavorful, aromatic and delicious.
Pan fried Cajun chicken served on sautéed onions and cherry tomatoes
Serves: 3 people
Ingredients
To marinate chicken
- Chicken breasts, halved – 3
- Cajun seasoning- 1 1/2 tbsp
- Lemon juice- 1 tbsp
- Ground pepper- 1/4 tsp
- Corn flour- 2 tbsp
- Salt- to taste
For pan frying:
- Olive oil- 1 1/2 tbsp
- Sesame oil- 1/2 tbsp
Sautéing:
- Onion, cut long- 1, large
- Cherry tomatoes- 15
- Cajun seasoning- 2 tsp
- Salt- a few pinches
Instruction
- Marinate the chicken with the above mentioned “to marinate chicken” ingredients. Keep aside for 5 minutes.
- Place a large non-stick pan over medium heat.
- Add olive oil and sesame oil to the pan.
- Place the marinated chicken without crowding in the pan, cook the chicken, flip it over and cook till both sides turn lightly browned.
- Transfer the chicken to a plate.
- Add some more oil and cook the rest of the chicken.
- After cooking the chicken, in the same pan add the chopped onion.
- Season with cajun seasoning and a few pinches of salt.
- Saute the onion and let it turn slightly tender.
- Add cherry tomatoes and saute for a few minutes.
- Don’t over cook the onions and tomatoes.
- Remove the pan from the heat.
- Spread the sautéed onion/cherry tomatoes on a plate, place the pan fried cajun chicken over it and serve.
Tips:
- Making Cajun chicken salad: Roughly chop the pan fried cajun chicken and add over the greens, drizzle with your favorite salad dressing and serve.
