I told you I am a soup freak 🙂
I admire the vibrant red color of radishes. Radishes are not a frequent visitor in my kitchen, but lately I’ve been trying to include all kinds of veggies in my diet. Last month, I just baked the radishes and had them with my salad. So this time, I wanted to make something different with them. Soup was the only dish I could think of and so decided to give it a shot.
After sipping a bowl of this hot Radish soup, I started admiring the veggie too. I will be trying more dishes with radishes here on out, but this soup will remain my favorite. To make this soup thick and creamy, I added red lentils and coconut milk.
Red Radish Soup
Ingredients:
- Radish, cut half- a bunch
- Red lentil- 1 cup
- Chicken Bouillon cube or veggie cube ( I used knorr) – 1/2 cube
- Water- 2 cups
- Chili powder- 1/2 tsp
- Cumin powder- 1/2 tsp
- Garam Masala- 1/4 tsp
- Thyme- 1 sprig
- Ground pepper- 1/4 tsp
- Coconut milk- 1/2 cup
Instruction
- Heat a large soup pot over medium heat.
- Add cut radishes and washed red lentil into the pot, sprinkle Thyme over it.
- Add the chicken bouillon cube and water, let the cube dissolve in water.
- Cover the pot, cook the lentil and radishes well.
- When they are cooked well, add chili powder, cumin powder, garam masala and Ground pepper.
- Combine well and puree the mixture in a blender to a coarse constituency.
- Pour the pureed soup into the pot, cook for a while.
- Pour coconut milk and combine well.
- Taste and add salt if needed.
- Remove from the heat and serve in soup bowls.
