Marinated chicken cooked with shallots &amp; tomatoes, towards the end stir-fried till brown. Flavourful &amp; delicious chicken, goes well with rice, chapati, appam, etc.<\/p>\n<p><strong>Tomato Chicken<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong>For marination<\/strong><\/p>\n<ul>\n<li>Chicken, boneless- 2 breasts or thighs<\/li>\n<li>Chili powder- 1 to 1 1\/2 tsp<\/li>\n<li>Turmeric powder- 1\/4 tsp<\/li>\n<li>Cumin powder- 1 tsp<\/li>\n<li>Coriander powder- 2 tsp<\/li>\n<li>Garam Masala- 1\/2 tsp<\/li>\n<li>Salt- 1 tsp<\/li>\n<\/ul>\n<p><strong>For Cooking<\/strong><\/p>\n<ul>\n<li>Coconut oil- 2 tbsp<\/li>\n<li>Shallots, sliced- 4 or 1 large onion<\/li>\n<li>Ginger, minced- 1\/2 tbsp<\/li>\n<li>Garlic, minced- 1\/2 tbsp<\/li>\n<li>Curry leaves- 1 sprig<\/li>\n<li>Tomato, chopped- 2, large<\/li>\n<li>Tomato paste- 2 tbsp<\/li>\n<li>Salt- 1\/2 tsp<\/li>\n<li>Cilantro, chopped- 1\/4 cup<\/li>\n<\/ul>\n<p><strong>Instruction<br \/>\n<\/strong><\/p>\n<ol>\n<li>Combine the chicken with the above-mentioned &#8216;for marination ingredients&#8217;, keep aside for 15 minutes.<\/li>\n<li>Place a large pan over medium heat, add oil, add ginger-garlic. Saute till golden in color.<\/li>\n<li>Add shallots or onion &amp; curry leaves, season with 1\/2 tsp salt.<\/li>\n<li>Cook till shallots or onion turn translucent.<\/li>\n<li>Add tomatoes, cook till it gets mashed up.<\/li>\n<li>Add the marinated chicken and combine well.
