I am on a roll or what? I&#8217;ve been posting recipes almost every day this month, I am definitely on a blogging spree. Well, since it&#8217;s <a href=\"http:\/\/www.thasneen.com\/cooking\/category\/recipes\/by-category\/ramadan-dishes\/\">Ramadan<\/a> I try different recipes every day and as soon as something turns out great I get the intense urge to post the recipe on my website. Now, that explains my active presence here.<\/p>\n<p style=\"text-align: left;\">I&#8217;ve already mentioned that I am a die-hard fan of <a href=\"http:\/\/www.thasneen.com\/cooking\/category\/recipes\/by-cuisine\/malabar-cuisine\/\">Malabar cuisine<\/a>. Malabar is the northernmost district of Kerala. Their dishes are totally unique and rich, most of the recipes call for chicken\/mutton\/beef and eggs. I have tried a few of their popular dishes like <a href=\"http:\/\/www.thasneen.com\/cooking\/adukku-pathiri-a-famous-malabar-dish\/\" target=\"_blank\" rel=\"noopener noreferrer\">Adukkupathiri or Chicken Pie<\/a>\u00a0and\u00a0<a href=\"http:\/\/www.thasneen.com\/cooking\/kaipola-steamed-plantain-cake\/\" target=\"_blank\" rel=\"noopener noreferrer\">Kaipola or\u00a0steamed plantain cake<\/a>\u00a0(a dish made with fried plantain and eggs). It&#8217;s such an irresistible dish enjoyed by both kids and adults. Quite similar to kaipola there is another dish called Erachi-pola. In Erachi-pola, chicken is used instead of plantain and it has three layers. It resembles a cake but no baking is involved. It&#8217;s made by slow cooking in a pan.<\/p>\n<p style=\"text-align: left;\">I adopted this recipe from a cooking show called Taste of Kerala. I&#8217;ve made a few changes to the original recipe and made it quite healthy. While cooking it, the whole house was filled with the enchanting aroma of this dish. After the final cooking, I couldn&#8217;t wait any longer and just indulged in this dish.<\/p>\n<p><strong>Irachipola or Chicken-Egg Cake<\/strong><\/p>\n<p><strong><a href=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2011\/08\/Erachipola-or-chicken-egg-cake.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-8669\" \/><\/a><\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For making the first layer:<\/strong><\/p>\n<ul>\n<li>White bread, cut off the sides- 4 slices<\/li>\n<li>Egg- 2<\/li>\n<li>Ground black pepper- 1\/4 tsp<\/li>\n<li>Salt- 1\/4 tsp<\/li>\n<li>Turmeric powder- 1\/4 tsp<\/li>\n<li>Water- 3\/4 cup<\/li>\n<\/ul>\n<p><strong>Second layer-Chicken Filling:<\/strong><\/p>\n<p><strong>For cooking chicken<\/strong><\/p>\n<ul>\n<li>Chicken breast, boneless- 2 breast, diced small<\/li>\n<li>Chili powder- 1 tsp<\/li>\n<li>Turmeric powder- 1\/8 tsp<\/li>\n<li>Fennel powder- 1 tsp (optional)<\/li>\n<li>Coriander powder- 1 1\/2 tsp<\/li>\n<li>Garam Masala- 1 tsp<\/li>\n<li>Salt- 1\/2 tsp<\/li>\n<\/ul>\n<p><strong>For making masala:<\/strong><\/p>\n<ul>\n<li>Oil- 2 tbsp<\/li>\n<li>Onion, chopped small- 2<\/li>\n<li>Ginger-garlic paste- 1\/2 tbsp<\/li>\n<li>Green chili, chopped- 1 or 2<\/li>\n<li>Curry leaves- 1 sprig<\/li>\n<li>Cooked Chicken<\/li>\n<li>Garam masala- 1\/2 tsp<\/li>\n<li>Cilantro, chopped- 2 tbsp<\/li>\n<li>Salt- 1\/2 tsp<\/li>\n<\/ul>\n<p><strong>For making the third layer:<\/strong><\/p>\n<ul>\n<li>Egg- 2<\/li>\n<li>Ground black pepper- 1\/8 tsp<\/li>\n<li>Salt- 1\/8 tsp<\/li>\n<\/ul>\n<div><strong>Other ingredients:<\/strong><\/div>\n<div>\n<ul>\n<li>Ghee or Butter- 2 tbsp<\/li>\n<li>Roasted cashews- 1\/4 cup<\/li>\n<li>Roasted Raisins- 2 tbsp<\/li>\n<\/ul>\n<\/div>\n<p><strong>Instruction<\/strong><\/p>\n<p><strong>For making the first layer:<\/strong><\/p>\n<ul>\n<li>In a blender, grind the bread, eggs, ground pepper, salt, and turmeric powder along with water to a smooth batter.<\/li>\n<li>If it&#8217;s too thick you could add little water but don&#8217;t add too much water, it should have a thick constituency.<a href=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2011\/08\/braed-egg-mixture.jpg\"><img second layer: How to cook chicken and make chicken masala:<\/strong><\/p>\n<ol>\n<li>In a saucepan, cook the chicken along with the above-mentioned ingredients &#8216;for cooking chicken&#8217;.<\/li>\n<li>Cover the pan, let the chicken cook well and stir fry when it starts to turn light brown.<\/li>\n<li>Using a wooden spoon or fork, shred the cooked chicken.<a oil, chopped onion, and1\/2 tsp salt.<\/li>\n<li>Saute, let onions turn translucent.<\/li>\n<li>Add ginger-garlic paste, green chilies, garam masala, and curry leaves, and cook till the onions start to turn golden brown.<\/li>\n<li>Add the cooked shredded chicken and chopped cilantro, combine well and let cook for 2 minutes.<a keep it aside.<\/li>\n<\/ol>\n<p><strong>\u00a0\u00a0For making the third layer:<\/strong><\/p>\n<ul>\n<li>In a blender, beat the eggs along with ground pepper and salt, keep aside.<\/li>\n<\/ul>\n<p><strong>How to cook Erachipola:<\/strong><\/p>\n<ol>\n<li>Use a small or medium-sized <strong>non-stick saucepan<\/strong> for cooking this.<\/li>\n<li>Place the saucepan over<strong> low heat.<\/strong><\/li>\n<li><strong>Grease the bottom<\/strong> and sides of the pan with 1 tbsp ghee or butter.<\/li>\n<li>Pour the pureed bread-egg batter on the pan as the first layer and cover the pan with its lid.<a href=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2011\/08\/bread-egg-mixture.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter till the center has cooked well, it shouldn&#8217;t be watery on the top.<\/li>\n<li>This would take around 15 minutes.<a its lid and let cook over low heat for 5 minutes.<\/li>\n<li>Since the chicken is already cooked you don&#8217;t have to cook it for too long.<\/li>\n<li>Pour the beaten egg mixture evenly as the over the egg mixture.<\/li>\n<li>Cover the pan with its lid and cook over low heat till the top egg layer has cooked well.<\/li>\n<li>It will take about 20 to 25 minutes, make sure the top egg layer is not watery, it should resemble an omelette.<\/li>\n<li>Remove the pan from the heat.<\/li>\n<li>Have a large plate ready.<\/li>\n<li>Using a knife, gently run through the sides of the pan, as the pan has been greased the cake wouldn&#8217;t stick to the pan.<\/li>\n<li>Cover the pan with a plate and turn the pan upside down and gently tap on the bottom of the pan.<\/li>\n<li>The chicken cake with 1 tbsp ghee.<\/li>\n<li>Gently slide the chicken cake into the pan, the top layer should go into the pan.<\/li>\n<li>Over low heat, cook the chicken cake for 3 minutes so that the egg layer will target=\"_blank\" rel=\"noopener noreferrer\">gluten free flour<\/a>,\u00a0<\/strong>blend along with egg, ground pepper, and salt.<\/li>\n<li>Add some water and make a thick batter out of it.<\/li>\n<li>Follow the rest of the preparation steps.<\/li>\n<\/ol>\n<\/div>\n<div><strong>Tips:<\/strong><\/div>\n<div>\n<ul>\n<li>You could even add all-purpose flour instead of bread, be sure to make a thick batter.<\/li>\n<li>It&#8217;s very important that you cook over low heat, otherwise, the bottom layer will burn.<\/li>\n<li>Make sure to use a non-stick cooking pan.<\/li>\n<li>If you have any leftover chicken masala, make cutlets out of it.
