Do you know what&#8217;s the significance of green color? Well, here a few reasons. &#8220;Emerald Isle&#8221; is the poetic name for Ireland due to its green countryside; green color is used by Irish people to connect with fairies, angels and saints; green is the color of spring.<\/p>\n<p>On this day, Irish people wear green ribbons, green clothes along with shamrock inspired designs, shamrock a three-leafed old white clover is a symbol of Ireland. As part of celebration, green colored dishes and drinks are also served.<\/p>\n<p>While browsing through my Picasa album in search of a green dish that I must have made before, I bumped into this Kale chickpea soup. I had made this soup last month and had \u00a0been wanting to post this recipe since then. Now is the perfect time and a perfect soup to blog about on St Patrick&#8217;s day, I couldn&#8217;t be any happier.. This soup has kale and chickpeas added to it, quite a healthy and filling soup.<\/p>\n<p><strong>Here are some dishes to make the celebration even more personal and special.<\/strong><\/p>\n<p>Soup:\u00a0<a href=\"http:\/\/www.thasneen.com\/cooking\/spinach-soup-and-st-paddys-day-meet-up\/\" target=\"_blank\" rel=\"noopener noreferrer\">Spinach soup<\/a><\/p>\n<p>Appetizer: <a href=\"http:\/\/www.thasneen.com\/cooking\/creamy-shrimp-stuffed-jalapeno\/\" target=\"_blank\" rel=\"noopener noreferrer\">Creamy shrimp stuffed Jalapeno<\/a><\/p>\n<p>Main Course:\u00a0<a href=\"http:\/\/www.thasneen.com\/cooking\/shepherds-pie-and-happy-st-patricks-day\/\" target=\"_blank\" rel=\"noopener noreferrer\">Shepherd&#8217;s\u00a0Pie<\/a><\/p>\n<p>Dessert: <a href=\"http:\/\/www.thasneen.com\/cooking\/lemon-pie-with-pistachio-graham-cracker-crust\/\" target=\"_blank\" rel=\"noopener noreferrer\">Lemon Pie with pistachio Graham Cracker crust<\/a><\/p>\n<p>Have fun folks!<\/p>\n<p><strong>Kale Chickpea soup<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>Kale, chopped- a bunch<\/li>\n<li>Chickpea, cooked- 1 can<\/li>\n<li>Onion, chopped- 1<\/li>\n<li>Garlic, minced- 1 1\/2 tsp<\/li>\n<li>Chicken\u00a0bouillon\u00a0cube- 1\/2 cube ( you could use chicken stock or vegetable stock)<\/li>\n<li>Water- 2 cups<\/li>\n<li>Ground pepper- 1\/4 tsp or as needed<\/li>\n<li>Salt- if needed<\/li>\n<li>Olive oil- 1 tbsp<\/li>\n<\/ul>\n<p><strong>Instruction<\/strong><\/p>\n<ul>\n<li>Place a non-stick pan over medium heat, add the chopped kale and cook till it wilts without adding water, keep aside.<img sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/li>\n<li>Heat a soup pot or large pan, add olive oil, onion and saute till tender.<\/li>\n<li>Add in minced garlic and saute for a couple of minutes.<\/li>\n<li>Add the drained, rinsed and cooked canned chickpea along with ground pepper.<\/li>\n<li>Put the chicken cube and add water, combine and let the cube dissolve in water.<img minutes.<\/li>\n<li>Now, add\u00a0saut\u00e9ed kale to the chickpea, and cook for some more time.<\/li>\n<li>Transfer the mixture to a blender and puree it to a coarse paste.<\/li>\n<li>Pour the
