I love how it gets mushy and tender when cooked. Lately, I&#8217;ve been obsessed with grilling eggplants. So this time I wanted to try something different and I made eggplant rice. To make it little more flavorful I added toasted sesame seeds. Eggplant rice tasted delicious and I enjoyed the bite of crunchy toasted sesame seeds from the rice. You could have this with raita or pickle.<\/p>\n<p><strong>Eggplant Rice<\/strong><\/p>\n<p><strong><a href=\"http:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2010\/11\/eggplant-rice-1.jpg\"><img cup<\/li>\n<li>Water- 1 1\/4 cups<\/li>\n<li>Salt- little<\/li>\n<\/ul>\n<p><strong>For making Eggplant <\/strong><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>Oil- 1 tbsp<\/li>\n<li>Dry red whole chili- 2<\/li>\n<li>Mustard seeds- 1tsp<\/li>\n<li>Onion, chopped-1<\/li>\n<li>Ginger-Garlic paste- 1tbsp<\/li>\n<li>Tomato, chopped-1<\/li>\n<li>Eggplant, diced- 3-4 cups or (3 Japanese eggplant or 1 American eggplant)<\/li>\n<li>Red chili powder- 1 tsp<\/li>\n<li>Turmeric powder-1\/4 tsp<\/li>\n<li>Coriander powder- 2 tsp<\/li>\n<li>Roasted Sesame seeds- 1\/4 cup<\/li>\n<li>Cilantro, chopped- 2 handfuls<\/li>\n<li>Salt- to taste<\/li>\n<\/ul>\n<p><strong>Instruction<\/strong><\/p>\n<ul>\n<li>Toast the sesame seeds in a pan till it turns light golden in color and keep a rice cooker along with water and little salt.<\/li>\n<li>Dice the eggplant and put it in a bowl filled with cold water to prevent the eggplant from getting brown in color.<\/li>\n<li>Heat a wide non-stick cooking pan over medium heat, add the oil.<\/li>\n<li>When the oil gets hot, add dry red whole chili and mustard seeds, let mustard seeds splutter.<\/li>\n<li>Add the chopped onions, salt and saute till it turns tender.<\/li>\n<li>Add the ginger-garlic paste, saute for a minute.<\/li>\n<li>Add tomatoes and eggplant.<\/li>\n<li>Cover the pan with its lid and let the vegetables get cooked.<\/li>\n<li>Let the eggplants turn tender.<\/li>\n<li>Add the chili powder, turmeric powder and coriander powder.<\/li>\n<li>Combine with the veggies and let cook for few
