Prawns can also be used.<\/li>\n<li class=\"instruction\">Place a saucepan over medium heat, add oil.<\/li>\n<li class=\"instruction\">Add chopped onions, season with 1\/2 tsp salt, combine well.<\/li>\n<li class=\"instruction\">Add ginger-garlic paste &amp; curry leaves, saute till onions turn golden in color.<\/li>\n<li class=\"instruction\">Add tomato, cook till tomato has slightly mashed up.<\/li>\n<li class=\"instruction\">Add chili powder, turmeric powder, coriander powder, garam masala &amp; salt; combine well.<\/li>\n<li class=\"instruction\">Add shrimp or prawns, combine well.<\/li>\n<li class=\"instruction\">Cook covered till shrimp has cooked through.<\/li>\n<li class=\"instruction\">Open the lid, stir fry over high heat till all the liquid has dried off.<\/li>\n<li class=\"instruction\">This is a dry roast, take the pan off the heat &amp; keep it aside.<\/li>\n<li class=\"instruction\">Next, let&#8217;s make cauliflower stir fry.<\/li>\n<li class=\"instruction\">I&#8217;ve taken half of a medium sized cauliflower, add the florets to a food processor &amp; grate it.<\/li>\n<li class=\"instruction\">Place a pan over medium heat, add oil.<\/li>\n<li class=\"instruction\">Add mustard seeds, let splutter.<\/li>\n<li class=\"instruction\">Add dried red chilies &amp; curry leaves, saute for a few seconds.<\/li>\n<li class=\"instruction\">Add chopped shallots &amp; salt, saute for a minute.<\/li>\n<li class=\"instruction\">Add grated cauliflower, combine well.<\/li>\n<li class=\"instruction\">Add 3 tbsp water &amp; cook covered till cauliflower turns slightly soft.<\/li>\n<li class=\"instruction\">Stir fry over high heat for a few minutes.<\/li>\n<li class=\"instruction\">Take the pan off the heat &amp; keep it aside.<\/li>\n<li class=\"instruction\">In a bowl, add oats- I&#8217;ve taken coarsely ground steel cut oats, instant oats can also be used.<\/li>\n<li class=\"instruction\">Add salt &amp; 2 tbsp water, combine well using your hand.<\/li>\n<li class=\"instruction\">We just have to wet the oats, don&#8217;t add a lot of water oats will turn mushy.<\/li>\n<li class=\"instruction\">I&#8217;ve used the puttu maker that can be placed on the whistle hole of the pressure cooker.<\/li>\n<li class=\"instruction\">Place the disc into the puttu maker.<\/li>\n<li class=\"instruction\">Add 1 tbsp grated coconut on the disc, top with a handful of wet oats.<\/li>\n<li class=\"instruction\">Add a handful of cauliflower stir fry over the oats.<\/li>\n<li class=\"instruction\">Add 2 tbsp shrimp roast over the cauliflower.<\/li>\n<li class=\"instruction\">Again, add oats &amp; cauliflower.<\/li>\n<li class=\"instruction\">Topmost layer should be 1 tbsp grated coconut.<\/li>\n<li class=\"instruction\">Close with the lid.<\/li>\n<li class=\"instruction\">Add 2 cups water to a pressure cooker.<\/li>\n<li class=\"instruction\">Place the pressure cooker over medium heat &amp; let steam release from the pressure cooker hole.<\/li>\n<li class=\"instruction\">Place the puttu maker on the whistle hole.<\/li>\n<li class=\"instruction\">Let steam cook for 3 minutes till steam released from all the holes on the puttu maker lid.<\/li>\n<li class=\"instruction\">Take the puttu maker of the pressure cooker, open the lid.<\/li>\n<li class=\"instruction\">Flip it over to a plate.<\/li>\n<li class=\"instruction\">Enjoy this healthy &amp; delicious oats cauliflower shrimp puttu with pappad.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: none;\">3.5.3251<\/div>\n<\/div>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; A unique twist on a beloved Kerala classic Puttu: Oats Cauliflower Shrimp Puttu, healthy &amp; delicious&#8230; For those unfamiliar, puttu is a traditional Kerala steamed rice cake, typically made from coarsely ground rice and coconut, layered and steamed to perfection.
