With shrimp &amp; squid I often make a Kerala style roast, the other day I had some leftover Kerala matta rice, I combined the roast with the rice. If you prefer you can make this with either shrimp or squid.<\/li>\n<li class=\"instruction\">I&#8217;ve added cooked Kerala matta rice, if you don&#8217;t have matta rice you can also add Sona Masoori rice or basmati rice.<\/li>\n<li class=\"instruction\">Crush the ginger, garlic &amp; green chilies, curry leaves in a mortar &amp; pestle.<\/li>\n<li class=\"instruction\">Use a large cast iron skillet, add coconut oil.<\/li>\n<li class=\"instruction\">Add the crushed ginger-garlic-green chilies-curry leaves, saute for a minute.<\/li>\n<li class=\"instruction\">Add the chopped onions &amp; small onions.<\/li>\n<li class=\"instruction\">Season with 1 tsp salt, cook till the onions turn golden in color.<\/li>\n<li class=\"instruction\">Add tomato, cook till tomato has mashed up.<\/li>\n<li class=\"instruction\">Add the spices &amp; 1 tsp salt, combine well.<\/li>\n<li class=\"instruction\">Add the shrimp &amp; squid rings, combine well.<\/li>\n<li class=\"instruction\">Add 1\/4 cup water, combine well &amp; cook till the shrimp &amp; squid have turned soft.<\/li>\n<li class=\"instruction\">Add 3 cups cooked Kerala matta rice, combine well.<\/li>\n<li class=\"instruction\">Cook for 2 minutes.<\/li>\n<li class=\"instruction\">Take the pan off the heat &amp; keep it covered.<\/li>\n<li class=\"instruction\">Place a small frying pan over medium heat, add 2 tbsp coconut oil.<\/li>\n<li class=\"instruction\">Add coconut slices, fry till they turn golden in color.<\/li>\n<li class=\"instruction\">Add curry leaves, fry for a few seconds.<\/li>\n<li class=\"instruction\">Pour this over the prepared shrimp-squid rice.
