After almost 5 months of freezing cold winter in Canada, I look forward to Summer to enjoy outdoor activities, travel, gardening, beach, stroll, outdoor cooking, grilling &amp; anything &amp; everything outdoorsy.<\/p>\n<p>Picking fresh herbs &amp; veggies from my vegetable garden and add them to my cooking, what a joy! Keep aside.<\/li>\n<li class=\"instruction\">Turn on Instant Pot. Select Saute setting, temperature should be medium or normal.<\/li>\n<li class=\"instruction\">Let the stainless steel pot turn hot.<\/li>\n<li class=\"instruction\">Add oil, ginger &amp; garlic.<\/li>\n<li class=\"instruction\">Saute for a minute.<\/li>\n<li class=\"instruction\">Add onion chopped, season with 1\/2 tsp salt.<\/li>\n<li class=\"instruction\">Saute for 2 minutes.<\/li>\n<li class=\"instruction\">Add tomatoes, combine well.<\/li>\n<li class=\"instruction\">Add the mint-cilantro-green chili paste, combine well.<\/li>\n<li class=\"instruction\">Add shrimp. (Use deveined &amp; shelled shrimp)<\/li>\n<li class=\"instruction\">Add soy sauce, combine well.<\/li>\n<li class=\"instruction\">Close the pot with the lid.<\/li>\n<li class=\"instruction\">Cancel Saute setting.<\/li>\n<li class=\"instruction\">Select Pressure cook setting, set time to 3 minutes at high pressure.<\/li>\n<li class=\"instruction\">After 3 minutes of pressure cooking, do a quick pressure release.<\/li>\n<li class=\"instruction\">Open the lid, shrimp has cooked well.<\/li>\n<li class=\"instruction\">In a bowl, combine 1 tbsp cornstarch with 2 tbsp cold water, combine well.<\/li>\n<li class=\"instruction\">Turn on Saute setting on the Instant Pot. The temperature should be normal or medium.<\/li>\n<li class=\"instruction\">Add the cornstarch slurry to the cooked shrimp curry.<\/li>\n<li class=\"instruction\">Combine well, the gravy will thicken right away.<\/li>\n<li class=\"instruction\">Taste &amp; add more salt if required.<\/li>\n<li class=\"instruction\">Garnish with green onions &amp; cilantro. Combine well.<\/li>\n<li class=\"instruction\">Remove the stainless steel pot from the main pot, keep covered for some time.<\/li>\n<li class=\"instruction\">Serve into a bowl, enjoy with basmati or jasmine rice.
