Over the years, Puttu got fancy makeovers by stuffing it with chicken, shrimp, beef, mussel, fish, etc.<\/p>\n<p>I&#8217;ve already tried making chicken stuffed puttu, mussel and squid stuffed puttu, tuna stuffed puttu, etc. So, this time I tried shrimp or prawns stuffed puttu. Keep it aside.<\/li>\n<li class=\"instruction\">Place a saucepan over medium heat, add oil.<\/li>\n<li class=\"instruction\">Add chopped onions, season with 1 tsp salt.<\/li>\n<li class=\"instruction\">Saute for a few minutes.<\/li>\n<li class=\"instruction\">Add ginger-garlic paste, and curry leaves saute till onions turn golden brown.<\/li>\n<li class=\"instruction\">Add tomatoes, cook till mashed up.<\/li>\n<li class=\"instruction\">Add the marinated shrimp.<\/li>\n<li class=\"instruction\">Cook covered till shrimp has cooked well.<\/li>\n<li class=\"instruction\">Open the lid, stir fry over high heat till all the liquid has dried off &amp; the roast turns slightly dry.<\/li>\n<li class=\"instruction\">Taste and add more salt if required.<\/li>\n<li class=\"instruction\">Add chopped cilantro, combine well,<\/li>\n<li class=\"instruction\">Take the pan off the heat and keep it covered.<\/li>\n<\/ol>\n<div class=\"ERSeparator\">[b]Making Puttu[\/b]<\/div>\n<ol>\n<li class=\"instruction\">I used store bought rice flour or puttu podi that&#8217;s exclusively for making puttu- Double Horse brand puttu flour.<\/li>\n<li class=\"instruction\">This flour is a bit grainy and should be soaked in water for 15 minutes. Follow the directions given on the back of the packet.<\/li>\n<li class=\"instruction\">Into a bowl, add 1 1\/2 cups flour, 1 1\/4 cups water &amp; salt; let soak for 15 minutes.<\/li>\n<li class=\"instruction\">After 15 minutes, the flour will absorb all the water.<\/li>\n<li class=\"instruction\">Using your clean hand, mix the flour well without any lumps, flour will be very soft.<\/li>\n<li class=\"instruction\">[b]Note[\/b] If you are using regular rice flour, flour shouldn&#8217;t be soaked in water. Add water little by little and wet the flour by mixing with your hand till flour is slightly wet.<\/li>\n<li class=\"instruction\">If you are using any other Puttu flour brand, read the puttu making direction on the back of the packet and follow that.<\/li>\n<\/ol>\n<div class=\"ERSeparator\">[b]Making Shrimp Stuffed Puttu[\/b]<\/div>\n<ol>\n<li class=\"instruction\">I&#8217;ve the puttu maker or the mould that can be kept on the whistle hole of a pressure cooker to steam cook.<\/li>\n<li class=\"instruction\">Into the puttu maker, place the disc that comes with the puttu maker at the bottom.<\/li>\n<li class=\"instruction\">Spread 1 tbsp grated coconut.<\/li>\n<li class=\"instruction\">On top of coconut, spread 1 handful of the puttu flour.<\/li>\n<li class=\"instruction\">On top of the flour, evenly spread 2 tbsp shrimp roast.<\/li>\n<li class=\"instruction\">Again, spread flour on top of the shrimp roast.<\/li>\n<li class=\"instruction\">As the topmost layer, spread grated coconut.<\/li>\n<li class=\"instruction\">Do not compress the flour down into the puttu maker. Spread it loosely.<\/li>\n<li class=\"instruction\">Close the puttu maker with its lid.<\/li>\n<li class=\"instruction\">Add 2 cups water into a pressure cooker.<\/li>\n<li class=\"instruction\">Close the cooker with the lid. Lid should have the sealing ring.<\/li>\n<li class=\"instruction\">Place cooker over medium heat and let steam release from the whistle hole.<\/li>\n<li class=\"instruction\">When steam releases from the whistle hole, place the puttu maker on it.<\/li>\n<li class=\"instruction\">Steam cook for 5 minutes till steam releases from all the holes on the puttu maker lid.<\/li>\n<li class=\"instruction\">Remove the puttu maker from the pressure cooker.<\/li>\n<li class=\"instruction\">Open the lid, on a plate flip over the puttu maker.<\/li>\n<li class=\"instruction\">Shrimp stuffed puttu will fall nicely on the plate in the shape of a dome.<\/li>\n<li class=\"instruction\">Enjoy along with pappadam or pickle.
