Medium temperature.<\/li>\n<li class=\"instruction\">Let turn hot.<\/li>\n<li class=\"instruction\">Soak 2 inch fresh tamarind in 1\/4 cup slightly warm water for 3 minutes. Squeeze the tamarind juice in water, drain the extract and discard the skin.<\/li>\n<li class=\"instruction\">Add oil, let turn hot.<\/li>\n<li class=\"instruction\">Add mustard seeds, let splutter.<\/li>\n<li class=\"instruction\">Add cumin seeds and dried red chilies, saute for 4 seconds.<\/li>\n<li class=\"instruction\">Add onions, season with salt and saute for 2 minutes.<\/li>\n<li class=\"instruction\">Add tomatoes, combine well.<\/li>\n<li class=\"instruction\">Add eggplants, combine well.<\/li>\n<li class=\"instruction\">Add chili powder, turmeric powder, cumin powder, coriander powder and 1\/2 tsp salt. Combine well,<\/li>\n<li class=\"instruction\">Add jaggery or palm sugar and tamarind extract, combine well.<\/li>\n<li class=\"instruction\">Close the pot with its lid.<\/li>\n<li class=\"instruction\">Cancel Saute mode.<\/li>\n<li class=\"instruction\">Turn on Pressure cook mode- high pressure, set time to [b]3 minutes[\/b].<\/li>\n<li class=\"instruction\">After 3 minutes cooking, do a quick pressure release.<\/li>\n<li class=\"instruction\">Open the lid, give everything a mix.<\/li>\n<li class=\"instruction\">Add chopped cilantro, combine well.<\/li>\n<li class=\"instruction\">Serve along with rice or chapati.
